Mini Orange Chocolate Chunk Cake

- For the syrup:
- 1/4 pound unsalted butter at room temperature
- 1 cup sugar
- 2 extra-large eggs at room temperature
- 1/8 cup grated orange zest (2 large oranges)
- 1 1/2 cups all-purpose flour plus 1 tablespoon
- 1/4 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon kosher salt
- 1/4 cup freshly squeezed orange juice
- 3 ounces buttermilk at room temperature
- 1 teaspoon pure vanilla extract
- 1 cup good semisweet chocolate chunks
- 1/4 cup sugar
- 1/4 cup freshly squeezed orange juice
- For the ganache:
- 4 ounces good semisweet chocolate chips
- 1/4 cup heavy cream
- 1/2 teaspoon instant coffee

Cornbread Dressing

Shirley, a lady I worked with at Jenny Craig in 2003, gave me this recipe
- One recipe of cornbread. I make an iron skillet of cornbread the day before Thanksgiving.
- Chicken or turkey broth or stock. I buy an extra whole chicken and make my own stock a couple of days before Thanksgiving.
- 1 large onion
- 3 stalks of celery
- 5 boiled eggs crushed
- salt and pepper
- sage
- 2 pieces of toast
Blackberry Jam

- 5 cups crushed blackberries (do not puree, crush with a potato masher)
- 7 cups sugar
- 1 (1 3/4 ounce) package dry pectin (I use Ball but Sure Jell will work too)
Chicken Tetrazzini

- 1 boiled chicken (deboned)
- 2 boullion cubes in cupes of water
- 1/4 cup of margarine
- 2 TBSP flour
- 1 can of cream of mushroom soup
- 1 can of sliced mushrooms
- 1/4 cup of chopped onions
- 1-1/2 cups of shredded cheddar cheese
- 2 handfuls of small egg noodles
- salt and pepper to taste
