Cornbread Dressing

Shirley, a lady I worked with at Jenny Craig in 2003, gave me this recipe. George loves cornbread dressing, so I make this every Thanksgiving!

Ingredients

  • One recipe of cornbread. I make an iron skillet of cornbread the day before Thanksgiving.
  • Chicken or turkey broth or stock. I buy an extra whole chicken and make my own stock a couple of days before Thanksgiving.
  • 1 large onion
  • 3 stalks of celery
  • 5 boiled eggs crushed
  • salt and pepper
  • sage
  • 2 pieces of toast

Preparation

Step 1

Make the cornbread
Make the stock (or buy stock in a box)
Saute onions and celery in a little bit of oil - brown well - you can add the salt pepper and sage to this
Crumble cornbread and toast together
Pour the onions and celery over that and mix together
Add the boiled eggs
Pour the broth or stock over the mixture...it will be very wet - juice will come to the top- mix well
Bake at 350 degrees for about 20 minutes or until golden brown
