Fresh Spinach Salad

This SPINACH based salad will boost the thyroid glands' output of metabolism-reviving hormones!
- 5 ounces fresh spinach (half a 10 ounce bag)
- 3/4 cup chopped celery
- 3/4 cup dried cranberries
- 1 can (15 ounces) mandarin oranges - or fresh Cuties or Halos
- or 1 cup of pomegranate seeds
- 1 large Granny Smith Apple
- 1 teaspoon lemon juice
- 1/3 cup pecans
- Optional: Feta cheese & Orecchiette (little ears) pasta
- Dressing
- 4 tablespoons olive oil or vegetable oil
- 2 tablespoons apple cider vinegar
- 2 tablespoons white wine vinegar
- 2-4 teaspoons white sugar - Or use Honey to taste or Stevia
- 1/8 teaspoon each: paprika, onion powder
- 1 tablespoon poppyseeds

Perfect Brownies

- 1/3 cup cocoa powder
- 1/2 cup + 2 tablespoons all-purpose flour
- 1/2 tsp kosher salt
- 10 tablespoons unsalted butter
- 4 oz. chopped bittersweet chocolate or chocolate chips (I used Hershey's Special Dark choc. chips, about 3/4 cups)
- 1 1/4 cups granulated sugar
- 2 large eggs
- 2 tsp. pure vanilla extract
Horseradish Dipping Sauce

In a medium bowl, stir together the sour cream, horseradish and lemon juice

- 1/4 cup prepared horseradish, or to taste
- 1 teaspoon lemon juice
- salt to taste
- 1 pinch paprika
- 1 pinch garlic salt
- 1/4 teaspoon dried minced onion

Cream shortening and sugar
- 3 ⁄4 cup shortening
- 1 cup sugar
- 1 ⁄4 cup molasses
- 1 egg, beaten
- 2 cups flour, sifted
- 1 ⁄4 teaspoon salt
- 2 teaspoons baking soda
- 1 teaspoon cinnamon
- 1 teaspoon clove
- 1 ⁄2 teaspoon ground ginger
Steve's Baby Back Ribs

In a bowl, combine all dry ingredients and mix well
- Dry Rub:
- 2 whole slabs pork baby back ribs
- 8 T light brown sugar, tightly packed
- 3 T kosher salt
- 1 T chili powder
- 1/2 t ground black pepper
- 1/2 t cayenne pepper
- 1/2 t jalapeño seasoning
- 1/2 t Old Bay Seasoning
- 1/2 t rubbed thyme
- 1/2 t onion powder
- Braising Liquid:
- 1 cup white wine (muscadet is best)
- 2 T white wine vinegar
- 2 T Worcestershire sauce
- 1 T honey
- 2 cloves garlic, chopped

- ½ cup Buffalo-style hot sauce
- ½ teaspoon fresh lemon juice
- Roasted poblano or hatch chiles
- ¼ cup sour cream
- 4 ounces cream cheese, cut into pieces and softened
- ½ cup freshly shredded white Cheddar cheese
- ¼ cup crumbled blue cheese
- 1 ½ teaspoons finely chopped chives, or to taste
- Celery sticks, carrot sticks, bread, potato chips, and-or tortilla chips, for serving
