Chicken Enchilada Casserole

Instructions Preheat oven to 350 degrees Fahrenheit
- 6 corn tortillas
- 2 cups chicken, cooked and shredded
- 1 and 1/2 cups shredded cheese (I used colby jack, any kind will work)
- 1 15oz. can refried beans
- 2 cups enchilada sauce

- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup diced carrots
- 4 cups chopped cabbage (approx. 1/4 head of cabbage)

- 2 whole bell peppers, chopped
- 1 can (28 oz) low sodium diced tomatoes

- 2 large yellow onions, chopped (about 1 1/2 cups)

- 1 onion, chopped
- 1 tablespoon butter
- 1/2 pound fresh crabmeat
- 1/4 pound shrimp - peeled, deveined and coarsely chopped
- 8 ounces Colby cheese
- 6 (10 inch) flour tortillas
- 1 cup half-and-half cream
- 1/2 cup sour cream
- 1/4 cup butter, melted
- 1 1/2 teaspoons dried parsley
- 1/2 teaspoon garlic salt

- 1 Tablespoon baking powder
- 1 teaspoon kosher salt
- 1 cup stone-ground yellow cornmeal
- 1/2 cup granulated sugar
- 3 large eggs, beaten
- 8 Tablespoons unsalted butter, melted
- 2 cups heavy cream
- 1 1/4 cups roasted yellow corn kernels (about 2 ears)
Dark Chocolate Tiger Cookies

Blend together sugar and oil in a large mixing bowl, add in cocoa and mix again
- 1 1/2 cup granulated sugar
- 1/2 cup vegetable oil
- 1/2 cup Hershey's Special Dark Cocoa
- 3 eggs
- 1 1/2 teaspoon vanilla extract
- 1 3/4 cup all purpose flour
- 1 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 to 1 cup powdered sugar
PBR Beer Cheese Soup

For best results, serve this recipe with a loaf of crusty bread and a bottle of hot sauce
- 1/4 lb butter
- 1/2 cup minced sweet onion
- 1/2 cup minced celery
- 1/2 cup minced carrot
- 1 tsp. salt
- 1 tsp. white pepper
- 1/8 tsp. cayenne pepper
- 1/2 cup flour
- 1 cup warm chicken stock
- 5 cups whole milk
- 3 cups quality sharp cheddar, shredded
- 1 cup queso blanco or Monterey Jack, shredded
- 1 tbsp. Worcestershire sauce
- 2 cans Pabst Blue Ribbon

Directions Preheat oven to 300 degrees and lightly grease a 9×9 inch baking dish or a 2 quart casserole dish
- 1 can whole kernel corn
- 1 can cream style corn
- 1 pk (8oz) of Jiffy corn muffin mix
- 1 cup sour cream
- 1/2 cup butter, melted
- 1 to 1/2 cups shredded cheddar cheese
- 2 eggs
- Salt/ Pepper to taste
