Baked Apples Filled with Apricots and Figs

To make the filling, in a heatproof bowl, combine the apricots, figs, prunes, pears, cranberries and raisins
- For the filling:
- 16 dried apricots (see note above)
- 4 dried Calimyrna figs
- 4 pitted soft prunes
- 2 dried pear halves, each cut into 4 pieces
- 1/4 cup dried cranberries
- 1/4 cup raisins
- 1 cup sweet apple cider
- 4 baking apples such as Rome Beauty, Fuji or Jonagold
- 2/3 cup thawed, frozen apple juice concentrate
- 1/3 cup honey (see note above)

Combine all ingredients in a pint glass over ice and stir thoroughly
- 2.5 oz. Smooth Scotch (Glenmorangie 12 Quinta Ruban)
- .25 oz. Smokey Scotch (Laphroaig 10)

1. Whirl egg, 1/2 tsp. salt, garlic, and mustard in a food processor until smooth
- 1 large egg
- 1/2 teaspoon coarse salt, plus more to taste
- 1 small clove garlic, minced
- 2 teaspoons Dijon mustard
- 1 cup mild extra-virgin olive oil
- 1/2 to 3/4 1/2 to 3/4 tsp. red pepper flakes
- 2 tablespoons fresh lemon juice
- 1 pound cooked bay shrimp, rinsed and drained
- 4 tablespoons finely chopped flat-leaf parsley
- 1 teaspoon finely chopped fresh thyme
- 3 to 4 3 to 4 large heads red or green Belgian endive, or a combination
- Freshly ground black pepper

Preheat oven to 450 degrees F
- 6 to 8 medium carrots
- 1 pound jumbo asparagus
- 1 pound large cipollini onions, peeled and halved through the root
- 3/4 cup extra-virgin olive oil, more for drizzling
- 3/4 pound shiitake mushrooms, stemmed and quartered
- Finely ground sea salt, preferably gray salt
- Freshly ground black pepper
- 1/4 cup sliced garlic
- 1 tablespoon finely chopped fresh thyme leaves
