1. Heat 1 tbsp. vegetable oil in a large pot (at least 5 qts

- 2 large onions, chopped

- 1 teaspoon ground cumin

Italian Sausage and Pepper Sandwiches

In a small bowl whisk the garlic oil ingredients

- 1 batch of light roux, recipe follows
- 3 quarts of seafood stock
- 1 pound - 35 count shrimp, peeled and deveined
- 1 pound lump crabmeat
- 2 dozen shucked oysters , liquid reserved
- 1 pound crab claw meat
- 2 cups chopped onions
- 1 cup chopped celery
- 1 cup chopped green peppers
- 1 cup chopped green onions
- 1 /2 cup chopped parsley
- Salt, pepper, and cayenne pepper to taste

1. Rinse beef, pat dry, and sprinkle generously all over with fresh-ground pepper
- 1 tied fat-trimmed boned beef chuck roast (3 to 3 1/2 lb.)

- 1 tablespoon butter or olive oil
- 3 carrots (about 1/4 lb. each), rinsed and peeled
- 1 onion (1/2 lb.), peeled and chopped
- 2/3 cup chopped celery
