Pork Dry Rub

Combine all ingredients together in a bowl
- 1 cup brown sugar
- 1/2 cup kosher salt (we use Diamond Crystal kosher salt)
- 4 tablespoons smoked paprika
- 2 tablespoons coarse black pepper
- 1/2 tablespoon cumin
- 1/2 tablespoon onion powder
- 1/2 tablespoon garlic powder
- 1 teaspoon cayenne pepper
Classic Applesauce

Combine apples, cinnamon stick, lemon juice, salt, and ¼ cup water in a large Dutch oven or other heavy pot
- 4 pounds any combination of apples (about 8 large), rinsed, halved or quartered
- 1 3-inch cinnamon stick

- 1 vanilla bean, split lengthwise, or 1 teaspoon vanilla extract

Preheat the grill for medium heat
- 2 apples
- 1/2 cup/120 milliliters water
- 1/4 cup/60 milliliters lemon juice
- 2 tablespoons/30 milliliters brown sugar
- 1 teaspoon/5 milliliters cinnamon

Grill-Roasted New York Strip Roast

Place the roast on a baking sheet and generously season on all sides with salt and pepper
- 1 New York strip roast, 4 1/2 to 5 lb.
- Kosher salt and freshly ground pepper, to taste

- 8 bone-in pork chops, about 1 inch thick (10 to 12 ounces each)
- 1 cup ketchup
- 6 garlic cloves, thinly sliced
- 4 jalapeños, thinly sliced crosswise
- 1/4 cup red wine vinegar
- 1 tablespoon fennel seeds
- Salt
- 1 orange, preferably a blood orange, sliced crosswise (8 slices)

- 1 teaspoon dried thyme
