Apple Slab Pie

1 Heat oven to 450°F. Remove pie crusts from pouches
- 1 box Pillsbury™ refrigerated pie crusts, softened as directed on box
- 1 cup granulated sugar
- 3 tablespoons all-purpose flour
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1 1/2 tablespoons lemon juice
- 9 cups thinly sliced, peeled apples (9 medium)
- 1 cup powdered sugar
- 2 tablespoons milk
Pie Crust

Cut butter into 1/2" cubes
- 12 tbsp. unsalted butter (1 1/2 sticks), cold
- 3 cups flour
- 1 tbsp. sugar
- 1 tsp. kosher salt
- 1/3 cup shortening (Crisco), cold
- 1/2 cup ice water
Butterfinger Pie

Mix crust ingredients and press into a pie pan
- Crust
- 1 1/2 cups chocolate graham cracker crumbs crushed
- 6 Tbsp. butter, melted
- 1 Butterfinger candy bar, crushed
- Pie
- 8 oz. block of cream cheese
- 1 tsp. vanilla
- 1/4 cup dark brown sugar
- 1/2 cup creamy peanut butter
- 16 oz. carton cool whip
- 1 cup crushed Butterfinger
- Topping
- 8 oz. cool whip Extra
- 2 Butterfinger candy bars, crushed
- 1 oz. of mini semi-sweet chocolate chips
- 1 oz. crushed peanuts
Pink Lemonade Pound Cake

Preheat oven to 350. Grease and flour a tube pan
- Glaze:
- 1 pkg. lemon cake mix
- 1 pkg. instant lemon pudding mix
- 4 eggs
- 1/3 cup vegetable oil
- 1/2 cup milk
- 1/2 cup pink lemonade concentrate
- 4 drops red food coloring
- 1 cup frozen pink lemonade concentrate, thawed
- 1/2 cup sugar
- Icing:
- 1/4 cup butter
- 2 cups powdered sugar
- 2 Tbsp. cream
- 1/2 tsp. vanilla
Skillet Scalloped Potatoes

In a large skillet, heat butter over medium heat
- l Tbsp. butter
- 1 Lb. small red potatoes, thinly sliced (about 3 cups)
- 1 Tbsp. dried minced onion
- 3/4 cup chicken broth
- 1/2 cup half-and-half
- 3/4 tsp. salt
- 1/4 tsp. pepper
- 1 cup shredded cheddar cheese
Cranberry Stuffed Apples Recipe

Core apples, leaving bottoms intact
- 5 medium apples
- 1/3 cup fresh or frozen cranberries, thawed and chopped
- 1/4 cup packed brown sugar
- 2 tablespoons chopped walnuts
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon ground nutmeg
- Whipped cream or vanilla ice cream, optional

Cut chicken breasts into cubes, add salt and pepper and saute in olive oil until browned

- 1/4 cup Italian dressing
- 2 Tbsp. honey
- 2 Tbsp. Balsamic or flavored vinegar
- 1 large can Italian cut green beans
- 1 small box tiny tomatoes, halved

Soak peas overnight in 6-8 cups water
- 1 1/2 lbs. dry black-eyed peas, rinsed and soaked overnight
- 4 cups water
- 8 oz. smoked ham, chopped
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 3 oz. can green chilies
- 1 1/2 tsp. chili powder
- 1 1/2 tsp. pepper
- 1 tsp. cumin
- 1 tsp. salt
