Cobb Salad Sub
By Jahel
For dressing, in a small bowl whisk together oil, vinegar, mustard, pepper, and salt
- 3 tablespoons olive oil
- 1 tablespoon white wine vinegar
- 1 teaspoon Dijon-style mustard
- ½ teaspoon freshly ground black pepper
- ¼ teaspoon salt
- 2 cups cubed cooked chicken or turkey
- 1 avocado, halved seeded peeled and chopped
- cup chopped roma tomatoes
- 4 slices bacon crisp-cooked drained and crumbled
- 1 1 pound loaf French bread
- 2 cups chopped butterhead lettuce leaves
- ¼ cup crumbled blue cheese
- 2 hard-cooked eggs chopped
Santa Fe Turkey Wraps

Spread tortillas with cream cheese to within 1/2 inch of the edges
- 4 10 inches tomato-flavor flour tortillas
- ½ cup cream cheese spread with jalapeño
- 3 cups chopped cooked turkey breast
- ¾ cup frozen roasted corn, thawed
- 2 roma tomatoes halved lengthwise and thinly sliced
- 1 avocado, halved seeded peeled and sliced
- cup thinly sliced red onion
- 3 cups shredded romaine lettuce
- Lime wedges optional
- Southwest chipotle or plain ranch salad dressing
Classic Creamy Coleslaw

For dressing, in a large bowl combine first six ingredients (through celery seeds)
- ½ cup mayonnaise
- 1 – 2 tablespoon sugar
- 1 tablespoon cider vinegar
- 1 tablespoon lemon juice
- ½ teaspoon salt
- ½ teaspoon celery seeds
- 4 cups shredded green and/or red cabbage
- 1 cup shredded carrots
- ¼ cup thinly sliced green onions
All Wrapped Up Chef Salad

On each tortilla layer lettuce, roast beef, avocado, cucumber and cheese
- 2 8-inch whole grain whole wheat or flour tortillas
- ¾ cup torn romaine lettuce
- 4 ounces sliced deli roast beef and/or turkey breast
- ½ of an avocado halved seeded peeled and sliced
- ¼ of a cucumber seeded and thinly sliced
- 1/4 cup Monterey Jack cheese with jalapeno peppers shredded
- Thousand Island or ranch salad dressing optional
Hash Brown Casserole

Preheat oven to 350°F. In a large bowl stir together soup and sour cream
- 1 10.75 ounce can reduced-fat and reduced-sodium or regular condensed cream of chicken soup
- 1 8 ounce carton light or regular sour cream
- ½ of a 24-ounce package (about 4 cups) frozen shredded hash brown potatoes
- 1 cup cubed cooked ham
- 1 cup cubed American cheese (4 ounces)
- ¼ cup chopped onion
- teaspoon ground black pepper
- 1 cup corn flakes
- 3 tablespoons butter melted
Creamy Meatball Casserole

Preheat oven to 350 degrees F
- 1 10.75 ounce can condensed cream of mushroom soup or cream of onion soup
- 1 cup milk
- ½ cup sour cream
- ½ teaspoon salt
- teaspoon ground black pepper
- 1 20 ounce package refrigerated red-skinned potato wedges
- 1 16 ounce package (32) frozen cooked meatballs
- 1 16 ounce package frozen stir-fry vegetables (any combination)
Chocolate-Mayonaisse Cake

Preheat oven to 350°. Whisk together flour and next 5 ingredients in a medium bowl
- 2 cups all-purpose flour
- 2/3 cup unsweetened cocoa
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon 1/4 teaspoon table salt
- 1/4 teaspoon baking powder Shortening
- 3 large eggs
- 1 and 2/3 cups firmly packed light brown sugar
- 2 teaspoons vanilla extract
- 1 cup mayonnaise
- 1 and 1/3 cups hot water
- Chocolate Cream Cheese
- Frosting
- 8-oz package cream cheese softened
- 1/2 cup butter softened
- 2 teaspoons vanilla extract
- 32-oz. package powdered sugar
- 1/2 cup unsweetened cocoa
- 5 to 6 T heavy cream
Sheet Pan Quiche

Preheat oven to 375°. Grease a 15 x 10“ baking pan
- 2 1/2 cups all purpose flour
- 2 teaspoons salt
- 1 cup butter cut up
- 1/4 to 1/2 cup ice water
- Six slices bacon
- Two medium potatoes peeled and coarsely chopped
- 1 cup chopped onion
- Two cloves minced garlic
- 6 cups fresh baby spinach
- 10 eggs
- 2 1/2 cups milk
- 1 tablespoon chopped fresh herbs
One Skillet Lasagna

Cook pasta according to package directions;
- 3 cups (6 ounces) dried mafalda (mini lasagna) noodles
- 12 oz lean ground beef or bulk pork sausage
- 1 - 26 ounce jar tomato-base pasta sauce
- 1 ½ cups shredded mozzarella cheese (6 oz)
- ¼ cup grated Parmesan cheese (1 ounce)
Peanut Butter & Sesame Crinkle Cookie

Preheat oven to 350. beat sugar, peanut butter, butter, sesame oil, vanilla and egg on medium until smooth
- 1 1/2 c sugar
- 1 c smooth peanut butter at room temperature
- 2 T toasted sesame oil
- 1 t vanilla
- 1 egg
- 1 c flour
- 1 c uncooked old fashioned oats
- 3/4 c roasted peanuts roughly chopped
- 1 t baking soda
- 3/4 c sesame seeds
