- 1-1/2 pounds ground beef
- 1 cup onion
- 1-1/2 teaspoon Cumin
- 2 cloves Crushed Garlic
- 4 teaspoons Chili Powder
- 1-1/2 teaspoons Salt
- 1/2 teaspoon Pepper
- 1 cup Water
- 2 Cups Taco Sauce
- 12 Torillas
- 1 pound Monteray Jack Cheese
- 1 cup Sour Cream
Roasted Asparagus and Red Peppers

1. Preheat oven to 400o F
- Pam non-stick cooking spray
- 1 pound asparagus, trimmed and fibrous stalks peeled (peeling is optional)
- 1 large red bell pepper, seeded and cut into 1/2 inch strips
- 1 lemon or 1 TBSP lemon juice
- 1 teaspoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon crushed red pepper
Chicken Noodle Casserole

In a large bowl, combine soup, mayonnaise and lemon juice
- 1 can cream of chicken soup
- 1/2 cup mayonnaise
- 2 TBSP lemon juice
- 2 cups chicken -- cubed,cooked
- 1 small onion -- chopped
- 1/4 cup green pepper -- chopped
- 1/4 cup sweet red pepper -- chopped
- 1 cup monterey jack cheese -- shredded, divided
- 1 cup sharp cheddar cheese -- shredded, divided
- 12 ounces medium egg noodles -- cooked & drained

- 1 cup golden raisins
- 1/4 cup candied ginger, chopped
- 1 cup currants
- 1 cup gold rum
- 1/2 cup sun dried cranberries
- 1 cup sugar

- 5 ounces unsalted butter (1 1/4 sticks)
- 1/2 cup sun dried cherries
- 1 cup unfiltered apple juice

- Zest of one lemon, chopped coarsely
- 6 allspice berries, ground
- Zest of one orange, chopped coarsely
- 1 teaspoon ground cinnamon

- 1 3/4 cups all purpose flour
- 1 1/2 teaspoons salt
- 1 teaspoon baking soda
- 1 teaspoon baking powder

- 1/2 pound each chanterelle, portobello and oyster mushrooms, each in 1/4-inch slices
