Adjust oven rack to lower-middle position and heat oven to 425 degrees
- Filling:
- 2 1/2 lb. peaches, ripe but firm (6 to 7 medium)
- 1/4 c. granulated sugar (1 3/4 oz.)
- 1 tsp. cornstarch
- 1 tbsp. lemon juice from 1 lemon
- pinch table salt
- Biscuit topping:
- 1 c. unbleached all purpose flour (5 oz.)
- 3 tbsp. granulated sugar
- 3/4 tsp. baking powder
- 1/4 tsp. baking soda
- 1/4 tsp. table salt
- 5 tbsp. unsalted butter (cold), cut into 1/4 inch cubes
- 1/3 c. plain whole milk yogurt
- 1 tsp. granulated sugar
Foolproof Vinaigrette

1. Combine vinegar, shallot, mayonnaise, salt, and pepper to taste in small nonreactive bowl
- This vinaigrette is best with mild flavored greens like mesclun, mache, or bibb lettuce.
- 1 tablespoon red wine or champagne vinegar
- 1 1/2 teaspoons very finely minced shallot
- 3/4 teaspoon regular or light mayonnaise
- 1/8 teaspoon table salt
- freshly ground black pepper
- 3 tablespoons extra-virgin olive oil
- 8 to 10 cups (about 6 ounces) lightly packed greens (see note)

- 1 1/2 c. granulated sugar
- 1/2 tsp. salt
- 1 1/2 c. animal crackers
- 2 (15-oz.) boxes Pillsbury ready to roll pie crust
- 4 tbsp. unsalted butter, melted and cooled
- 6 tbsp. minute tapioca
- 2 tsp. ground cinnamon
