Awesome Alligator

Put all ingredients except club soda and garnishes
- 8 ounces CRAN-STRAWBERRY Cranberry Strawberry Drink
- 3/4 ounce cream of coconut
- Dash grenadine syrup
- Club soda, optional
- Whipped cream, garnish
- Cherry or strawberry, garnish
Ginger Apple Compote

Peel, core and thinly slice 2 1/2-3 lbs
- 2 1/2-3 lbs. Granny Smith apples
- 2 " piece of vanilla bean
- 1/2 cup sugar
- 1/2 cup chopped crystallized ginger.
- 1/4 cup water
Buttermilk Brined Turkey

In saucepan, bring turkey brine and 1 quart water to boil
- 1 1/2 cups turkey brine
- 4 quart buttermilk
- 1 fresh turkey, 16-18 lb. heart, neack and gizzard removed (reserved, if desired)
- 4 tbs. (1/2 stick) butter, at room temperature.
MUFFINS - APPLE AND OAT BRAN

1. Preheat oven to 375 degrees
- 1 1/4 C. whole wheat flour
- 1 C. oat bran
- 1/3 C. packed brown sugar
- 2 1/2 tsp. baking powder
- 1/4 tsp. baking soda
- 1/4 tsp. salt
- 1/4 tsp. ground nutmeg
- 1/4 tsp. ground cinnamon
- 1 C. buttermilk
- 2 egg whites
- 2 T. cooking oil
- 3/4 C. shredded, peeled apple
- Nonstick spray coating
KEY LIME PIE

COMBINE first 3 ingredients
- 1 1/4 cups graham cracker crumbs
- 1/4 cup firmly packed light brown sugar
- 1/3 cup butter or margarine, melted
- 2 (l4-ounce) cans sweetened condensed milk
- 1 cup fresh Key lime juice
- 2 egg whites
- 1/4 teaspoon cream of tartar
- 2 tablespoons sugar
- Garnish: lime slices

- 1 medium onion, coarsely chopped
- 2 celery ribs, coarsely chopped
- 7 tablespoons unsalted butter, divided
- 1 good-quality baguette (1/2 lb), cut into 1-inch cubes (8 cups)
- 1/3 cup chopped celery leaves
- 1 1/2 tablespoons chopped sage
- 1 cup turkey stock or reduced-sodium chicken broth
- 1 large egg
TACOS - CHICKEN AND BLACK BEAN

1. Cut chicken into 1/2 inch cubes
- 2 boneless, skinless chicken breast halves
- 4 tsp. fresh lime juice, divided
- 2-3 T. olive oil, divided
- 4 green onions, green and white part, thinly sliced
- 2 large garlic cloves, thinly sliced
- 3/4 C. cooked black beans or 2/3 of 1 15 oz. can black beans, drained
- 3-4 fresh tomatillos, husk removed, cute into 1/2 inch squares (1 C.) or 1 C. diced fresh tomatoes
- 1/2 C. red or green pepper, diced in 1/4 inch pieces
- 1 jalapeno pepper, seeded and minced
- 1 tsp. kosher salt
- 1 T. chopped fresh cilantro
- Pinch cayenne
- 10 taco shells
- 1 / C. shredded mozzarella or Monterey Jack cheese
- 1/2 C. dairy sour cream (optional)
Rustic Stuffed Artichokes

Place artichokes in pan filled with boiling water
- 2 medium artichokes
- 1 Clove garlic, peeled and crushed
- 1 tsp. olive oil, divided
- Clove garlic, minced
- 1 c. fresh bread crumbs
- 1 heaping tbsp. minced fresh parsley
- Salt, freshly ground pepper

- 8 ounces CRAN GRAPE® Grape Cranberry Drink
- 1 ounce cream of coconut
- Lemon-lime soda
- Whipped cream garnish
WRAP - CHICKEN WITH ROASTED TOMATO AND GOAT CHEESE

Heat oven to 300°F. Line sheet pan with foil; place tomato slices in a single layer
- 3 large plum tomatoes, sliced
- 2 T. olive oil, divided
- Salt and pepper
- 3/4 C. softened goat cheese (about 5.3 oz.)
- 2 T. minced chervil
- 2 boneless, skinless chicken breasts (about 3/4 lb.)
- 1 1/2 C. shredded romaine lettuce
- 4 8" flour tortillas
