MUFFINS - CRANBERRY APPLE

1. Preheat oven to 350°F
- 1 C. all purpose flour
- 1/2 C. whole wheat flour, oat burn or all purpose flour
- 1 tsp. baking soda
- 1 tsp. ground cinnamon
- 1/4 tsp. salt
- 2 large eggs
- 3/4 C. dark brown sugar, firmly packed
- 1/4 C. vegetable oil
- 1 tsp. vanilla extract
- 3/4 C. diced, unpeeled tart apples
- 3/4 C. fresh or frozen cranberries
- 1/2 C. chopped walnuts
SANDWICH - CLASSIC EGG SALAD

In a medium bowl, coarsely chop eggs
- Other Mix-ins:
- 8 peeled hard cooked eggs
- 1/2 C. mayonnaise
- 2 T. chopped celery
- 2 tsp. dijon mustard
- Hot pepper sauce
- Salt and pepper
- Lettuce or watercress
- sliced black olives
- chopped fresh parsley
- chopped fresh chives
- walnut pieces
- chopped dill pickles
- capers
- 8 slices bread
Dairy Rich Braham Cracker Pie

Prepare the crust by combining crumbs coconut, sugar and melted butter
- Crust:
- 1 1/3 cup graham cracker crumbs
- 2 tbsp. toasted coconut
- 1 tbsp. sugar
- 1/3 cup butter melted
- Filling:
- 1 (8oz) pkg. cream cheese, softened
- 2 cup milk
- 2 (3 1/2 oz) boxes coconut cream instant pudding
- 1/2 tsp. almond flavoring
- 1/2 tsp. vanilla
- 2 cup heavy cream, whipped divided
- 1 tbsp. toasted coconut, for garnish
Saute Robert

Saute Onions in butter for 2-3 minutes or until translucent
- 1 oz Butter
- 1/2 cup Onions, finely chopped
- 1 cup White Wine
- 1.5 oz. Demi-Glace Gold, diced
- 3/4 tsp. Dry Mustard, dissolved in warm water.
- 1/2 Water, Hot
- Salt
- Fresh Ground Black Pepper
BROCCOLI CHEDDAR TWICE BAKED POTATOES

Wash potatoes well. Dry and pierce several times with fork
- 4 medium baking potatoes
- 1 cup DANNON® Plain Yogurt
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/8 tsp paprika
- 1 cup shredded light Cheddar cheese
- 1 clove garlic, minced
- 1 cup chopped broccoli
- 1 cup sliced mushrooms
- 1/4 cup chopped pimentos, well drained
Frozen Cranberry Margarita

Put all ingredients except garnish
- 5 ounces OCEAN SPRAY Whole Berry Cranberry Sauce
- 1 1/2 ounces white tequila
- 1/2 ounce triple see
- 1 1/2 , ounces lime juice
- 5 ounces crushed ice
- Strawberry fan. garnish
SANDWICH - BALSAMIC GLAZED CHICKEN, ROASTED RED PEPPER AND ONION CIABATTA

Pick chicken meat from bones, removing skin; shred into large pieces
- 1 Rotisserie Chicken
- 1 T. olive oil
- 1 C. sweet onion slices
- 3 toasted sweet red pepper, cut into strips
- 1/2 C. balsamic vinegar
- 1 C. aioli (1 cup mayonnaise and 5 cloves of garlic)
- 6 ciabatta rolls, sliced horizontally
- 6 slices provolone cheese cut in half
Garlic-Studded Pork Shoulder

Cut 1" slices, 1 1/2-2" apart, in pork
- 5 lb. boneless pork shoulder
- 10 garlic cloves, sliced 1/4" thick
- Salt and freshly ground pepper, to taste
- 1 tbs. finely chopped fresh thyme
- 2 tsp. finely chopped fresh rosemary
- 5 tbs. finely chopped fresh flat-leaf parsley
- 2 tbs. olive oil
- 1/2 cup white wine
- 3/4 lb. parsnips, peeled and cut into 2" pieces
- 1 lb. turnips, peeled and quartered
- 1 1/2 lb. Granny Smith apples, cut into eighths
- 2 cups apple cider
PIE - PUMPKIN LIBBY'S FAMOUS

1. Prepare pie crust according to package directions for filled one-crust pie using 9 inch pie pan
- 1 15 oz. pkg Pillsbury All Ready Pie Crusts
- 2 eggs, lightly beaten
- 1 16 oz. can Libby's Solid Pack Pumpkin
- 3/4 C. granulated sugar
- 1/2 tsp. salt
- 1 tsp. ground cinnamon
- 1/2 tsp. ground ginger
- 1/4 tsp. ground cloves
- 1 12 oz. can undiluted evaporated milk
Cranberry Relish

1. Peel 1 orange and cut the zest (orange part only) into a very fine julienne, as thin as possible; set aside
- 2 oranges
- 1 C. sugar
- 2 tsp. lemon juice
- 2 tsp. fresh ginger, cut in fine julienne
- 1 bag (12 oz.) fresh or frozen cranberries
- 1/2 tsp. freshly ground white pepper
