Maine Lobster in Champagne Sauce with Pappardelle

When purchasing live lobsters, ask to have claws and tails separeated from body
- 8 Maine lobsters (about 1 1/2lb. each)
- 4 tbsp olive oil
- 6 cloves garlic, chopped
- 2 carrots, chopped
- 2 onions, chopped
- 2 celery ribs, chopped
- 3 cups white wine, divided
- 8 cups chicken broth
- 30 white peppercorns, divided
- 2 tbsp tomato paste
- 3 tsp coriander seeds, divided
- 1 1/2 cups heavy cream, divided
- 1/4 lb. thinly sliced prosciutto
- 1 lb. asparagus, trimmed and
- blanched
- 4 tbsp unsalted butter, divided
- 3 shallots, chopped
- 1 bottle (750 ml) champagne
- 1 bay leaf
- 1 pt. grape ,tomatoes
- 1 lb. papparoelle pasta
TERRY'S COCONUT CHESS PIE

Preheat oven to 350°, Beat sugar and eggs together until light
- 1 1/4 cups granulated sugar
- 3 large eggs
- 1/4 cup butter
- 1/4 cup margarine
- 1/4 cup buttermilk
- 1 teaspoon vanilla extract
- 1 cup flaked coconut
- 1 9" pie crust, unbaked
Roasted Garlic Mashed Potatoes

Immerse 2 lbs. potatoes, peeled and cut into 3" chunks in cold water for 5 min
- 2 lbs. potatoes, peeled and cut
- 2 heads of roasted garlic pulp (about 2 Tbs.)
- 2 Tbs. unsalted butter

- 2/3 cup heated half and half,
- Salt and pepper

GRILLED NECTARINES (OR PEARS) AND RASPBERRIES WITH NOBLE RIESLING BAVAROIS

- 6 sweet, ripe nectarines (halved and pitted) or 6 small pears
- 1 pint fresh raspberries
- Powdered sugar

Spicy Cajun Shrimp

Clean and devein shrimp under cold running water
- 2 dozen large frozen shrimp, thawed and peeled (or 1/2 lb. shrimp and 1/2 scallops or other seafood)
- 1 tsp. ground cayenne pepper
- 1/2 tsp. black pepper
- 1/2 tsp salt
- 1/2 tsp. crushed red pepper
- 1/2 tsp crushed dried thyme
- 1 tsp. crushed dried basil
- 1/2 tsp. crushed dried oregano
- 1/3 cup margarine
- 1 1/2 tsp. minced garlic
- 1 tsp. Worcestershire sauce
- 1/4 cup beer room temperature
- 1 cup or 1 large tomato, coarsely diced

CELERY-ROOT POTATOES

- l lb. celery root, peeled

- 1 yellow onion, diced
