LOAF - SWEET TREAT CRANBERRY

Store in the refrigerator for up to 1 week
- 2 3-oz. pkgs. cream cheese, softened
- 1 egg
- 2 T. Cointreau or other orange liqueur or apple juice
- 1 T. sugar
- 2 C. all purpose flour
- 1 C. sugar
- 1 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 3/4 C. apple juice
- 1/4 C. butter, melted
- 1 beaten egg
- 1 1/2 C. chopped fresh cranberries
- 1/2 C. chopped walnuts
Beer Braised Barbecued Chicken

Season chicken with salt and pepper
- 4 lb. chicken thighs, drumsticks and wings
- Salt and freshly ground pepper, to taste
- 4 Tbs. canola oil
- 2 yellow onions, sliced 1/4" thick
- 1 1/4 cups ale or lager-style beer
- 2 1/2 cups barbecue sauce
- 4 ears of corn, boiled until tender
- Herb compound butter for serving*
BABY HOT BROWNS

ARRANGE bread slices on a lightly greased baking sheet
- 24 pumpernickel party rye bread slices
- 3 tablespoons butter or margarine
- 3 tablespoons all-purpose flour
- 1/2 cup (2 ounces) shredded sharp
- Cheddar cheese
- l cup milk
- 1 1/2 cups diced cooked turkey
- 1/4 teaspoon salt
- 1/4 teaspoon ground red pepper
- 1/2 cup freshly grated Parmesan cheese
- 6 bacon slices, cooked and crumbled
MUFFINS - SWEET POTATO

1. Heat oven to 400°F. Grease 12 muffin cups
- 1 1/2 C. unsifted all-purpose flour
- 1/4 C. light-brown sugar
- 1 T. baking powder
- 1/2 tsp. salt
- 1/2 tsp. ground cinnamon
- 1/4 tsp. ground nutmeg
- 1 large egg
- 1/2 C. milk
- 1 C. cooked, mashed, sweet potatoes
- 1/4 C. butter or margarine, melted
- 1/2 C. dark seedless raisins
Grilled Shrimp Marinade -Broiler

Mix ingredients. Marinate for 1 hour
- 1 1/2 lbs. large shrimp
- 1/2 cup olive oil
- 1 T lemon juice
- 1/2 tsp salt
- Ground pepper to taste
- 1 tsp minced garlic
- 1 tsp crushed oregano
- 1 T finely chopped parsley

For cookie crust. Roll cookies with a rolling pin or grind in food processor
- 1 1/4 cup ground chocolate wafers
- 4 tbsp. melted butter or margarine
- 2 cup milk
- 1/2 cup plus 4 tbsp. granulated sugar
- 1 1/4 tbsp. cornstarch
- 4 eggs, separated
- 1 1/2 oz. semi-sweet chocolate, melted
- 1 tsp. vanilla
- 1 1/4 tbsp. plain gelatin soaked in 1/4 c water
- 2 to 3 tbsp. rum
- 1 cup whipped cream
- Shaved chocolate

- Marinade:
- 2 1/2 lb. beef skirt steak
- 1 green pepper
- 1 medium onion
- 2 green onions
- 2 cloves garlic
- 2 8 oz. bottles Italian dressing
- 1/4 tsp. black pepper
- 1/2 tsp. salt
- 1/4 C. Worcestershire sauce
- 1/2 C. beer
- 1/2 C. cola
- 10 10 in. flour tortillas
- Shredded cheddar cheese
- Dairy sour cream
- Guacamole
- Salsa:
- 1 15 oz. can whole tomatoes
- 1/2 medium onion
- 1 4 oz. can chopped green chiles
- 1 8 oz. bottle taco sauce
- Salt
- Pepper
RACK OF LAMB - SONOMA SPRING
