  • FOR COCONUT ICING:
  • 1/3 C. unsalted butter, softened
  • 2/3 C. cream cheese, softened
  • 1 tsp. coconut extract
  • 2 tsp. vanilla extract
  • 3/4 C. unsifted lOx powdered sugar
  • 3 C. sweetened flaked coconut
  • 1/2 C. toasted coconut for garnish
