COCONUT CAKE - LAYERED WITH COCONUT FROSTING

1. Preheat oven to 350°
- FOR CAKE:
- 1 C. unsalted butter at room temperature
- 2 C. granulated sugar
- 4 large eggs at room temperature
- 3 C. unsifted cake flour
- 3 tsp. baking powder
- 1/8 tsp. salt
- 1 1/2 C. whole buttermilk at room
- temperature
- 1 tsp. vanilla extract
- 1 tsp. coconut extract
- cooking spray
- flour to prepare cake pans
- FOR COCONUT ICING:
- 1/3 C. unsalted butter, softened
- 2/3 C. cream cheese, softened
- 1 tsp. coconut extract
- 2 tsp. vanilla extract
- 3/4 C. unsifted lOx powdered sugar
- 3 C. sweetened flaked coconut
- 1/2 C. toasted coconut for garnish
Celebration Chili

In a Dutch oven, cook the pork in hot cooking oil till no longer pink
- 1 lb boneless pork loin, cut into 1/2 in pieces
- 2 tablespoons cooking oil
- 1 medium green sweet pepper, coarsely chopped (1 cup)
- 1 medium red sweet pepper, coarsely chopped ( 1 cup)
- 1 clove garlic, minced
- 1 teaspoon pepper
- 1 teaspoon ground cumin
- 1 /t teaspoon salt
- 1 cup orange juice
- 1/2 cup water
- 1 oz. semisweet chocolate, cut up
- 2 15 oz. cans dark red kidney beans, rinsed and drained
- 1 15 oz can tomato sauce
- 1 14 1/2 oz can chicken broth
- 3 to 4 jalapeno peppers, seeded and finely chopped
- 2 medium tomatoes, seeded and chopped
- 1/4 cup snipped fresh cilantro
- Dairy sour cream (optional)
- Fresh cilantro sprigs (optional)
Skillet Chicken In Sesame Ginger Sauce

Heat large nonstick skillet over medium heat
- 4 (5 ounce) boneless skinless chicken breasts
- 1/3 cup apricot jam
- 1/4 cup water
- 3 tablespoons French's Spicy Brown Mustard
- 2 tablespoons reduced-sodium soy sauce
- 1/2 teaspoon ground ginger
- 1 teaspoon dark sesame oil
CLASSIC TURKEY POTPIE

In a skillet, heat turkey fat over high heat
- 2 tablespoons turkey fat or vegetable oil
- 1 cup chopped onions
- 2 carrots, peeled, diced, and steamed
- 2 cups diced cooked turkey meat
- 1 cup gravy or heavy cream
- Salt and freshly ground black pepper to taste
- 1 prepared pie dough
Andalucian Shellfish Cocktail

Discard mussel shells and any mussels which do not open
- 1 lb mussels, scrubbed and steamed open
- 1/2 lb peeled prawns
- 1 lb tomatoes, chopped
- 1/2 onion, chopped
- 1 green pepper, chopped
- 1/2 cucumber, peeled and chopped (optional)
- 2 hard-cooked eggs
- 1 clove garlic, crushed
- 6 tbsp extra virgin olive oil
- 5 tbsp wine vinegar
- 3 tbsp chopped parsley
- 1 tsp salt
- lettuce to garnish
PRIME RIB ROAST - BONELESS WITH YORKSHIRE PUDDING

Preheat oven to 400 degrees
- Roast:
- 8 lb. boneless prime rib roast
- 1/4 C. kosher salt
- 1/4 C. freshly cracked ground pepper
- 1 large onion, peeled and coursely chopped
- 1 large leek, white part only, coarsely chopped
- 2 large carrots, peeled and coarsely chopped
- 2 stalks celery, coarsely chopped
- 3 plum tomatoes, cored and coarsely diced
- 8 garlic cloves, peeled
- Yorkshire Pudding:
- 4 large eggs
- 1-1/2 C. milk
- 1-1/2 C. all purpose flour
- 1/2 tsp. kosher salt
- 1/4 C. fat from roast drippings
- Sauce:
- 1/2 C. dry red wine
- 3 C. beef stock
- Salt and black pepper to taste
Chilled tortilla Soup

Slice tortillas into 1/8 inch wide strips
- 4-6 corn tortillas, preferably stale
- 1/3 cup plus 1 tablespoon vegetable oil
- 4-5 medium dried pasilla chilies, stemmed and seeded, cut into 1 inch squares
- 2 garlic cloves, unpeeled
- 1 medium-large round rip tomato
- 1 medium white onion, sliced 1/8 inch thick
- 6 cups chicken broth
- Salt to taste
- 4 cups loosely packed, thinly sliced Swiss chard leaves
- 2 cups shredded Monterey Jack cheese
- 1 large lime, cut into 6 wedges
Sauteed Turkey Cutlets with Lemon Caper Sauce

Heat 11/2 T. of butter and the oil in a large skillet over medium-high heat
- 3 T. unsalted butter, at room temperature
- 1 1/2 T vegetable oil
- 1 1/2 lbs, turkey breast, sliced and pounded to about 1/4-inch thick
- Flour for dredging
- Salt and freshly ground black pepper to taste
- 1.5 oz. Jus de Poulet Lie Gold"' + 1 c. hot water
- 3 T. lemon juice
- 2 T. finely chopped flat-leaf parsley
- 1 T. capers
Individual Alsatian Tartes

Cook onions in butter, stirring often until golden but not browned (about 8 minutes)
- 2 large onions, halved and thinly sliced
- 1 Tbs. butter
- 1 egg yolk
- 1 Tbs. heavy cream

BASIC PIZZA DOUGH

Combine water, sugar, and yeast
- COMBINE:
- 1 1/2 cups warm water (105°-115°)
- 2 T. sugar
- 2 1/4 t. active dry yeast (one 1/4-oz. packet)
- Mix:
- 3 1/2 cups all-purpose flour
- 1/2 cup bread flour
- 1 T. kosher or sea salt
- ADD TO YEAST MIXTURE:
- 3 T. extra-virgin olive oil
- POUR YEAST/OIL MIXTURE INTO FLOUR AND. KNEAD.
