SANDWICH - DOUBLE PORK CLUB

Chill one hour
- 12 slices wheat or sourdough bread
- 1 1/2 C. julienne or shredded green cabbage
- 1/4 C. grated carrot
- 1 tsp. poppy seeds
- 1 tsp. white-wine vinegar
- 1/2 C. mayonnaise
- 2 T. Dijon mustard
- 1/2 lb. double-smoked bacon or Canadian bacon
- 1/2 lb. thinly sliced ham
- 1 C. watercress leaves, washed
- Salt and pepper to taste
Blackberry Cobbler

Preheat oven to 375°F. Lightly grease a baking dish
- For the filling:
- 6 cups blackberries or a mix of seasonal
- berries
- 1/3 cup sugar
- 1 Tbs. all-purpose flour
- 1 tsp. lemon zest
- Pinch of salt
- For the topping:
- 1 1/4 cups all-purpose flour
- 1/3 cup sugar
- 2 tsp. baking powder
- 1/2 tsp. ground cinnamon
- 1/4 tsp salt
- 1 egg
- 1/2 cup buttermilk
- 6 tbs. (3/4 stick) unsalted butter, melted and cooled
- 1/2 tsp. vanilla extract
SOUFFLE - YAUCO ESPRESSOP WITH CHICHAITO ICE CREAM AND ORANGE SAUCE

Make ice cream one day before serving
- Ice Cream:
- 11 oz. heavy cream
- 1 vanilla bean
- 1 1/2 oz. Sambuca
- 1 1/2 oz. white rum
- 7 egg yolks
- 5 oz. granulated sugar
- 11 oz. buttermilk
- Souffle:
- 1 lb. butter
- 1 C. brewed espresso, cooled
- 1 C. granulated sugar
- Zest of 1 orange
- 1/8 C. Grand Marnier
- 3/4 lb. semisweet chocolate
- 3/4 lb. unsweetened chocolate
- 8 whole eggs
- Orange Sauce:
- 6 oz. water
- 6 oz. granulated sugar
- 1 qt. orange juice
- Zest of 1 orange
- 1 oz. gelatin
- Powdered sugar for garnish
- Optional garnish:
- Roasted coffee beans, sprigs of fennel, twists of orange peel
Blini with Savoury Toppings

1. Dissolve the yeast in the water in a bowl
- 1 tsp (5 mL) dried yeast
- 2 tbsp (25 mL) lukewarm water
- 1 cup plus 2 tbsp (275 mL) lukewarm milk
- 1 cup (250 mL) stoneground cornmeal or
- buckwheat flour
- 1 cup (250 mL) all-purpose flour
- 3/4 to 1 tsp (4 to 5 mL) salt
- 1/2 cup (125 mL.) Buttermilk or plain non-fat yogurt
- 2 eggs, separated
- 2 tbsp (25 mL) unsalted butter, melted
COFFEE CAKE - CINNAMON WHOLE GRAIN

Preheat oven to 350°F. Grease and flour a 12" fluted tube pan
- 1/2 cup butter or margarine, softened
- 1/2 cup vegetable shortening
- 1 2/3 cups sugar
- 2 teaspoons vanilla extract
- 4 eggs
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1 1/2 cups unbleached flour
- 3/4 cup millet flour
- 3/4 cup whole wheat flour
- 1/3 cup sugar
- 2 tablespoons cinnamon
FONDUE - SENSATIONAL CHOCOLATE RASPBERRY

1. Heat cream in small, heavy-duty saucepan over medium-high heat; bring just to a boil
- 2/3 C. heavy whipping cream
- 8 oz. 62% Cacao Bittersweet Chocolate Baking Bar, finely chopped
- 2 T. light corn syrup
- 1 T. raspberry liqueur (optional)
- 2 T. seedless raspberry jam
- 1/2 tsp. vanilla extract
- Pinch of fine sea salt
- Pastry twists, fortune cookies and/or cake cubes
UPSIDE DOWN CAKE - GINGERBREAD

1. Preheat oven to 350°F
- 1 can (20 oz.) pineapple slices
- 1/2 C. butter, softened, divided
- 1 C. brown sugar, packed, divided
- 10 maraschino cherries
- 1 egg
- 1/2 C. dark molasses
- 1 1/2 C. all purpose flour
- 1 tsp. baking soda
- 1 tsp. ground ginger
- 1/2 tsp. ground cinnamon
- 1/2 tsp. salt
LAMB SHOULDER - CITRUS-SCENTED BRAISED LAMB

Heat the oven to 350"F. Combine the orange and lemon zests with the lemon juice, tomato paste and 1 cup water
- Zest of 1 orange
- Zest of 1 lemon
- 1/3 C. freshly squeezed lemon juice
- 3/4 C. (one 6-oz. can) tomato paste, preferably organic
- Sea salt
- 2 1/2 to 3 lb. boneless rolled and tied lamb shoulder or leg
- Freshly ground black pepper
- 1/2 tsp. fennel seeds
- Fennel fronds from a fresh fennel bulb or wild fennel
Tuscan Beans

Mix green beans and cannellini gently in microwave safe 2 quart casserole and set aside
- Sauce:
- 1/2 lb. green beans, snapped in 2-inch lengths, cooked and drained
- 1 1-lb., 3-oz.) can cannellini (white
- kidney beans), drained
- 3 tbsp, butter or margarine
- 3 tbsp. flour
- 1 3/4 c. milk
- 1/8 tsp, pepper
- 2 tbsp. minced chives
- 2 tbsp, minced Italian parsley
- 2 tbsp. finely grated Parmesan cheese
- 1/2 tsp, salt, about
Amaretto and Irish Cream

Pour both liqueurs into old fashioned glass filled with ice; stir lightly
- 1 1/2 ounces Amaretto
- 1 1/2 ounces Irish Cream
