CHOCOLATE CAKE - FESTIVE

1. Stir chocolate with water over low heat until melted
- 8 oz. German sweet chocolate
- 3 T. water
- 6 oz. cream cheese softened
- 2 C. confectioners sugar
- 1 tsp. vanilla
- 3 1/2 C. thawed Cool Whip
- 2 baked 9" chocolate cake layers, cooled and split into 4 layers
KOBE BEEF AND CRISP LANGOUSTINE WITH SUCCOTASH AND PARSLEY POTATO PUREE

Season beef liberally with salt and pepper; let rest at least 5 minutes before cooking
- SUCCOTASH:
- 2 lbs. domestic Kobe beef loin or tenderloin
- salt and black pepper
- 4 sheets rice paper or spring roll wrappers
- 4 langoustine tails (large prawns or shrimp can be substituted)
- 4 bamboo skewers
- 1 egg white
- 1 quart vegetable oil for frying
- 2 ears of corn, kernels removed
- 1 C. fresh butter beans, shelled, blanched and peeled
- 1/4 C. chicken stock or broth
- 1 T. whole butter
- salt and pepper to taste
- PARSLEY PUREE:
- 1 bunch parsley
- 1/4 C. chicken stock
- POTATO PUREE:
- 2 russet or Idaho potatoes
- 1/4 C. heavy cream
- 1/4 C. butter
- salt and pepper to taste
Broccoli with Herbs

Wash 2 lbs. broccoli and discard the coarse stalks
- 2 lbs. broccoli
- 1 egg, hard boiled
- Juice of 1 lemon
- 6 tbs. olive oil
- Salt and pepper
- 2 tbs. each of chopped fresh chives
- Parsley
- 1 tbs. of chopped fresh chervil
- 1 tbs. of tarragon
Cranberry Sluch (5qt Pail)

Mix freeze use 7 up or diet 7 up
- 1 small pkg cherry jello (dissolved)
- 1 cup boiling water
- 3 cup cold water
- 2 cup cranberry juice
- 2 cup vodka
- 1 12 oz can orange juice
- 1 frozen lemonade
STRATA - CHEESE

1 hour blending time Can be prepared the night before
- 8 slices good quality white bread
- 6 oz. mature cheddar, shredded
- 3 eggs, lightly beaten
- 1/4 tsp. salt
- 1/8 tsp. paprika
- 1/8 tsp. cayenne
- 2 C. cream
- 1 T. chopped parsley
- 1 T. grated onion
TEA SANDWICH - CHICKEN ALMOND

1. In a small sauce pot bring broth or water to a boil and add chicken breasts
- 3 C. chicken broth or water
- 1 1/2 lbs. boneless, skinless chicken breast
- 1 C. mayonnaise
- 1/4 C. scallions
- 1/2 C. slivered almonds, toasted
- 12 very thin slices of white sandwich bread
- 1/4 C. sesame seeds, toasted
- Kosher salt and freshly
- ground black pepper
DESSERT SAUCE - CHOCOLATE CRANBERRY

1. Combine cranberry sauce and chocolate bits in a medium saucepan
- 16 oz. jellied cranberry sauce
- 1/2 C. semi-sweet chocolate bits
LAMB LEG - DAUBE WITH WHITE WINE AND OLIVES

Cut the lamb into 2-inch cubes, discarding any sinew and fat
- 3 lbs. boneless lamb leg or shoulder Marinade (recipe below)
- 1 calf's or pig's foot, split
- 1 1/2 C. green olives
- 3/4 lb. piece of lean bacon, preferably with skin
- 3 medium onions (about 1 lb.), thinly sliced
- 3 large carrots (about 1 lb.), thickly sliced
- 2 lbs. tomatoes, peeled, seeded and chopped
- 4 or 5 cloves garlic, chopped
- Freshly ground pepper
- 3 C. water, and more if needed
- Salt (optional)
- 3 T. chopped parsley
Hash-Brown Potatoes

1. In large skillet or on griddle, heat 2 tablespoons oil over medium-high heat
- 4 to 5 tablespoons vegetable oil
- 4 cups coarsely shredded, peeled,
- boiled baking potatoes (about 1 1/2
- pounds raw potatoes)

- 1 ounce chocolate syrup
- 1 ounce raspberry liqueur
- 8 ounces Ocean Spray Cranberry
- Raspberry Cranberry Drink
- 2 ounces half and half
- Whipped cream, garnish
- Chocolate sprinkles, garnish
- Maraschino cherry, garnish
