SANDWICH - BEEF PO'BOYS

1. In food processor, puree onion, mushrooms, garlic and parsley until smooth
- 1 yellow onion, chopped
- 6 oz. cremini mushrooms
- 3 garlic cloves, peeled and minced
- 2 T. chopped fresh fiat-leaf parsley
- 1 beef chuck roast, 3-4 lb.
- Salt and freshly ground pepper, to taste
- 3 T. vegetable oil
- 1 T. veal demi-glace
- 1 qt. beef stock
- Mayonnaise for serving
- 6 long French rolls, split
- Shredded iceberg lettuce for serving
- Thinly sliced tomatoes for serving
- Hot sauce for serving
FONDUE - CHOCOLATE PLUNGE

1. In medium saucepan stir corn syrup and cream
- 2/3 C. light or dark corn syrup
- 1/2 C. heavy or whipping cream
- 8 oz. semi-sweet chocolate or german sweet chocolate

- 3 T. lemon juice

- 1 tbsp vegetable oil
- 1 tbsp minced garlic
- 2 1/2 "-thick slices fresh ginger, lightly crushed
- 2 stalks lemongrass,trimmed, cut into 3" pieces
- and lightly crushed
- 2 star anise
- 8 cups water or beef stock
- 1 cup ketchup
- 1/2 tsp sea salt
- 2 medium carrots, peeled and cut into
- 2 " pieces
- 2 medium new potatoes, peeled and quartered
- 1 tbsp fish sauce
- 1 tbsp oyster sauce
GRILLED POTATO AND ASPARAGUS

To Grill Vegetables: Prepare medium-hot fire
- 3/4 cup olive oil
- 3 cloves garlic, minced
- Salt
- Freshly ground black pepper
- 3 pounds small red potatoes halved
- 1 bunch asparagus spears, trimmed and blanched
- 6 Roma tomatoes, halved
- 1 red onion, chopped
- 1 tablespoon chopped fresh rosemary
- 1/4 cup cider vinegar
- 2 teaspoons Dijon mustard
- 2 teaspoons chopped Italian parsley
- Freshly squeeze lemon juice
- Parmesan cheese, optional
- 4-6 slices prosciutto, chopped

- 1 tsp. vanilla
- 4 large eggs
- 1/4 C. creme fraiche
- 1 C. milk
- 6 T. creme de menthe liqueur
- Chocolate Mint Glaze:
- 8 oz. finely quality bittersweet chocolate, chopped
- 1/4 C. very hot water
- 1 T. creme de menthe
- Mint sprigs for garnish
LEMON CAKE - STRAWBERRY SWIRL

- 1 egg yolk
- 1/4 C. sugar
- 1 tsp. lemon flavoring
