CHICKPEA PUREE

In small saucepan, heat chickpeas in their cooking liquid
- 1 C. cooked chickpeas with some of their cooking liquid
- 1/2 tsp Aleppo pepper
- 1/4 tsp paprika
- 1 T. tahini
- 1/4 C. extra-virgin olive oil
- 1/2 lemon for juicing
- salt and freshly ground black pepper
CAULIFLOWER WITH HOT DILL VINAIGRETTE

Heat oil in pressure cooker
- 1 T. olive oil
- 3 medium leeks, white part only, thoroughly rinsed and thinly sliced (about 2 c.)
- 1 clove garlic, finely minced
- 1 T. mild white-wine or sherry vinegar
- 1 c. vegetable stock or Bouillon
- 1 large head cauliflower, broken into large florets (about 2 1/2 long, 2 1/4" wide)
- 1/2 c. tightly packed, finely minced fresh dill, divided in half
- 1/4 tsp salt, or to taste
Potatoes Paprika

Peel 3 medium size potatoes and cut into French fry segments approximately 2" long
- 3 medium size potatoes
- 4 Tbs. olive oil or vegetable oil
- 1 peeled and chopped onion
- 1 clove minced garlic.
- 1 Tbs. Szeged Hungarian Paprika (
- Salt
- 2 cups water
- 1 green bell pepper
- 1 chopped large tomato(approx 1 1/2 cups)

- 6 ounces Ocean Spray Cranberry Juice Cocktail
- 1 1/2 ounce black rum
- Lime wedge
ROLL - DITCH PLAINS LOBSTER

Preheat your grill. Bring a pot of salted water to a boil
- 8 potato hot dog rolls
- 1/2 C. melted butter
- 4 1-1/2 pound lobsters
- 2 C. Hellmann's mayonnaise
- 2 T. tarragon, finely chopped
- 2 T. parsley, finely chopped
- 1 C. celery, finely diced
- 1/4 C. scallions, finely sliced
- 1 tsp. Old Bay seasoning
- salt to taste
- pepper to taste
MUFFINS - WHEAT

1. Heat oven to 400°degrees
- 1 C. buttermilk
- 2 C. whole wheat flake cereal (like Nutri-grain)
- 1 C. whole wheat flour
- 1/2 C. finely chopped pared apple (about 1/2 medium apple)
- 1/4 C. unsweetened apple juice
- 1/4 C. molasses
- 1 egg
- 3/4 tsp. baking soda
- 1/4 tsp. salt
- 1/4 tsp. ground cinnamon

POPPY SEED CAKE - CARAMEL TOPPED AMARETTO

1. Preheat oven to 350° degrees
- Cake:
- 1 pkg. Pillsbury Plus White Cake Mix
- 1/4 C. poppy seed
- 1 C. water
- 1/3 C. oil
- 1/4 C. amaretto or 1 tsp. almond extract*
- 3 egg whites - save yolks
- Glaze:
- 1/4 C. butter
- 3/4 C. sugar
- 1/4 C. water
- 1/4 C. amaretto or 1 tsp. almond extract*
- Frosting:
- 1 C. firmly packed brown sugar
- 2 T. cornstarch
- 1/2 tsp. salt
- 5 oz. can evaporated milk
- 3 egg yolks
- 1 T. amaretto or 1/2 tsp. almond extract**
- Sliced or slivered almonds, if desired
CHICKEN - SOUTHWEST WITH MONTEREY JACK AND PEPPERS

1. Preheat oven to 375 degrees
- 2 T. fine dry bread crumbs
- 5 tsp. chili powder, divided
- 2 tsp. paprika
- 1/2 tsp. freshly ground black pepper, divided
- 4 chicken breast halves, skinned and boned
- 4 oz. Monterey Jack cheese, thinly sliced and cut to fit pocket of chicken breast, divided
- 1/2 red pepper, cut into 1/4 inch wide strips
- 1/4 yellow or green pepper, cut into 1/4 inch wide strips
- 2 T. minced fresh cilantro, oregano or parsley
- 1 avocado, peeled, sliced into thin wedges
- 2 tsp. fresh lime juice
- 2 ripe tomatoes, sliced
SKIRT STEAK - GRILLED

In a small bowl or a 2-cup measure, blend the mustard, cumin, bay leaf, and garlic
- 1 tsp. dry mustard
- 1 tsp. ground cumin
- 1 bay leaf-crumbled with the main rib removed
- 1 lg. clove garlic-minced
- 1 C. well seasoned beef broth heated to boiling
- 1/4 C. Worcestershire sauce
- 1 T. cider vinegar
- 1 T. vegetable oil
- 1 tsp. hot pepper sauce
- 2 skirt steaks-about 12 oz. each
