White Gazpacho (Chilled Garlic Soup)

Combine bread crumbs and milk in bowl
- 1/2 c Bread crumbs
- 1/4 c. milk
- 1 1/2 c. (4 oz) slivered almonds (reserve a few for garish)
- 3 cloves garlic, pressed or finely minced
- 3/4 c. olive oil
- 2 1/2 c. water, divided
- 1 tbsp. white or cider vinegar
- Salt to taste
- 1 medium cucumber, peeled and cut in chunks
- 1/2 c. half-and-half
- 1 1/2 c. peeled seedless white or green peppers (optional)
Roasted Ears of Corn with Basil Chive Butter

Butter directions: Puree basil, salt and pepper, and butter in a food processor
- Basil Chive butter:
- 12 Ears corn, shucked
- 1 1/2 cups Basil chive butter
- Gray salt
- 4 cups firmly packed basil leaves
- 2 sticks unsalted butter
- Freshly ground pepper
Wild Mushroom Risotto

Heat 2 Tbs. butter and 2 tbs olive oil in small skillet, add re hydrated mushrooms and cook about 3 min
- 4 tbs. unsalted butter
- 4 tbs. olive oil
- 1 cup dried wild mushrooms re-hydrated in 3/4 cup warm stock and coarsely chopped (reserve liquid) or 1 cup sliced domestic mushrooms
- Salt and freshly ground pepper
- 2/3 cups shallots, minced
- 1 medium onion, minced
- 1 1/2 cups Arborio rice
- 1/2 cup dry sherry
- 2 cloves garlic, minced
- 5-6 cups heated stock, made from duck or beef demi-glace or use canned or homemade stock
- 1 cup spinach chopped
- 1/2 cup Asiago cheese
QUICHE - MINIATURE QUICHE LORRAINES

Chill 1 hour
- Tart pastry for 6 mini-quiches:
- 1 1/2 C. all-purpose flour
- 1/2 tsp. salt
- 6 T. cold unsalted butter,
- cut into bits
- 2 T. cold vegetable shortening
- 3-4 T. ice water
- 1/2 C. heavy cream
- 1/2 C. milk
- 3 eggs
- 1 T. unsalted butter, melted
- 1/2 C. grated Gruyere cheese
- Salt and freshly ground black pepper to taste
- Cayenne pepper, to taste
- Freshly grated nutmeg, to taste
- 3 cooked bacon slices, chopped
BURNT CREAM - CARAMEL CATALANA

- 2 1/2 C. heavy cream
- 1 cinnamon stick
- Zest of 1/2 lemon
- 1/3 C. plus 8 tsp. sugar
- 5 egg yolks
- 1 tsp. vanilla extract

- 1 can of mushrooms
- 1 cup butter
- 3/4 cup chopped onion
- 1 cup chopped celery
- Add 1 scant tsp salt
- 1 scant tsp pepper
- 1 tbsp dried sage
- 1 tbsp dried thyme
