Tortilla Pinwheels

Mix ingredients and spread over tortillas
- 8 oz sour cream
- 8 oz cream cheese, softened
- 4 oz green chilies, diced and drained
- 4 oz black olives, chopped and drained
- 1 cup shredded cheddar
- 1/2 cup chopped green onion
- garlic powder and seasoned salt, to taste
- 5 (10") tortillas
- 1 can refried beans (optional)
Oatmeal Toffee Cookies

1. Preheat oven to 375 degrees
- 1 cup butter
- 2 eggs
- 2 cups packed light brown sugar
- 2 tsp vanilla extract
- 1 3/4 cups flour
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp salt
- 3 cups quick cooking oats
- 1 1/3 cups (one 8 oz package) toffee bits
Ham and Cheese Morning Muffins

- 1 1/4 cups unbleached flour
- 3/4 cup fine yellow cornmeal
- 1/4 cup sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda

- 2 large eggs
- 1/3 cup corn oil
- 1 cup finely diced ham

Caramelized Chicken

- 2 1/2 lbs chicken legs
- 1 2/3 tablespoons olive oil (to help it stop sticking to the pan)

- 1 2/3 tablespoons ketchup
- 3/4 cup honey
- 2 -3 garlic cloves, minced

- 1 medium onion, chopped
- Kosher salt
- Pepper
- 2 tablespoon(s) all-purpose flour
- 1.25 cup(s) whole milk
- 4 ounce(s) (1 cup) extra-sharp Cheddar, grated
- 4 ounce(s) (1 cup) Muenster cheese or Gruyère, grated
Mexican Rice Casserole

Preheat the oven to 375 degrees F
- 1 tablespoons canola oil
- 2 cloves garlic, minced
- 1/2 large onion, chopped
- 2 cups long grain rice
- One 14.5-ounce cans whole tomatoes
- One 10-ounce can diced tomatoes and green chiles, such as Rotel
- 1/2 teaspoon cumin (or more to taste)
- 1/2 teaspoon kosher salt
- 1/2 teaspoon ground black pepper
- 1/4 teaspoon cayenne pepper
- 1/8 teaspoon turmeric
- 3 to 4 cups low-sodium chicken broth (more if needed)
- 3/4 cups grated Cheddar
- Fresh cilantro, chopped, for serving
Multigrain Yogurt Waffles

Mix the dry ingredients. Mix the wet ingredients
- 3/4 cups all-purpose flour
- 1/2 cup whole wheat flour
- 2 tablespoons ground flax seed
- 1/2 cup rolled oats (not quick cooking)
- 1/2 teaspoon salt
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/4 cup brown sugar
- 3 tablespoons melted butter
- 3 eggs
- 1 cup plain, non-fat yogurt (I use greek yogurt)
- 1/2 cup milk (any kind)
Bacon and Baked Potato Soup

1. Scrub potatoes with a vegetable brush; pat dry
- 2 6- to 8-oz. baking potatoes (such as russet or Yukon gold)
- 3 Tbsp. butter
- 1/2 cup chopped onion
- 1/4 cup chopped celery
- 3 Tbsp. all-purpose flour
- 1/2 tsp. dried thyme, crushed
- 1/4 tsp. salt
- 1/8 tsp. ground black pepper
- 4 cups half-and-half, light cream or milk
- 1-1/4 cups shredded American cheese (5 ounces)
- 1 cup chicken broth
- 8 slices bacon, crisp-cooked, drained and crumbled
- 2 Tbsp. thinly sliced green onion
- 1/4 cup dairy sour cream
