Brownie Thins

Position rack in lowest third of oven; preheat to 350°F
- 6 tablespoons (3/4 stick) unsalted butter, cut into pieces
- 2 ounces unsweetened chocolate, chopped
- 1/2 cup sugar
- 1 large egg
- 3 tablespoons plus 1 teaspoon all purpose flour
- 1/4 teaspoon vanilla extract
- 1/4 teaspoon almond extract
- Pinch of coarse kosher salt
- Nonstick vegetable oil spray
- 1/4 cup chopped pistachios
Goat Cheese and Spinach Stuffed Chicken Breast

To prepare chicken breasts, use a paring knife to cut a pocket into each breast
- 4 Chicken Breasts
- 3 tbsp olive oil, divided
- 2 cloves garlic, minced
- 1 bag baby spinach
- 4 oz goat cheese
- Salt and pepper, to taste
- S2-3 bulbs shallots, sliced thinly
- 2 c chicken broth (4 cups if not using wine, 2 cups if you are)
- 2 c white wine (I would use dry)
- Balsamic Vinegar, to taste(just a splash)
- Cornstarch (1-2 tsp) mixed in equal parts water (as needed)
- 2-3 tbsp chopped fresh parsley
- 1 container sliced baby bella mushrooms
Fresh Strawberry Tarts

Heat oven to 450°F. Remove pie crust from pouch; place flat on work surface
- Crust
- 1 Pillsbury® refrigerated pie crust (from 15-oz box), softened as directed on box
- 3/4 teaspoon sugar
- Filling
- 2 1/2 cups sliced strawberries
- 1/2 cup strawberry glaze
- 6 tablespoons hot fudge ice cream topping, heated
- 1/3 cup frozen (thawed) whipped topping
