Shredded Tex-Mex Salad w/Creamy Lime Dressing

- Creamy Lime Dressing:
- 1 (8.5-ounce) box cornbread mix
- 1 large egg
- 1/3 cup milk
- 1 (15.5-ounce) can black beans, drained and rinsed
- 1 packet sazon seasoning
- 1 cup salsa
- 1 head romaine lettuce, cut into strips
- 1 1/2 cups grated Monterey jack cheese
- 1 1/2 cups grated Cheddar
- 1 tablespoon red wine vinegar
- 1 teaspoon lime zest
- 1/4 cup lime juice
- 1/2 cup sour cream
- 1 clove garlic, smashed
- 1 tablespoon honey
- 1/2 cup extra-virgin olive oil
Chocolate Chip Cheesecake

Combine crumbs and butter; press into bottom of a 9” (23 cm) springform pan
- CRUST:
- 11/2 c. chocolate cookie crumbs
- 1/4 c. butter, melted
- FILLING:
- 2 3oz pkgs cream cheese, softened
- 1 can Regular or Low Fat Eagle Brand® sweetened condensed milk
- 1 egg
- 1 tsp vanilla extract
- 11/2 c. semi-sweet mini-chocolate chips, divided
- 1 tsp flour
- 1/4 c. whipping cream
