- 1 can Cream-Style Corn
- 1 c. Sour Cream
- 1 box Jiffy Corn Muffin Mix
- 1 c. Melted Margarine
- 2 eggs, Beaten
- 1 T. Sugar
Spanish Tortilla With Manchego and Green Olives

Preheat oven to 350. In 10-12 inch ovenproof nonstick skillet heat 2 T
- 1/4 c. (plus 3 T.) Olive Oil
- 1 Medium Yellow Onion (cut into 1/8" slices)
- 11/2 t. Salt
- 11/2 Pounds Red Potatoes (cut into 1/8" slices)
- 1/2 t Freshly Ground Pepper
- 8 Large Eggs (beaten)
- 1/2 c. Chopped Green Olives (about 15 large, pitted)
- 1/4 Pound Aged Manchego Cheese (thinly sliced)
Cheddar Creamed Corn

Combine all in a 3-4 quart slow cooker
- 2 pkg. Frozen Corn (thawed) 1-16 oz./1-12 oz.
- 1 pkg. (8 oz.)Cubed Cream Cheese
- 3/4 c. Shredded Cheddar Cheese
- 1/4 c. Melted Butter
- 1/4 c. Heavy Whipping Cream
- 1/2 t. Salt
- 1/4 t. Pepper

- 1 c. sugar
- 2 c. all-purpose flour
- 1-1/4 c. peanut butter chips

- 1-1/2 t. Salt, divided
- 1/2 t. Pepper
- 1 (15 oz.) Black Beans/rinsed and drained
- 1 can (4 oz.) Chopped Green Chilies
- 1 T. Minced Fresh Cilantro
- 3/4 c. Sour Cream
- 3/4 c. Mayonnaise
- 2 t. Lime Juice
- 1 t. Ground Chipotle Pepper OR 2 t. Chili Powder
- 1/2 t. Ground Cumin
- 1/4 t. Garlic Powder
