Ingredients
- 1/2 c. Butter (softened)
- 1 c. Sugar
- 10 z. Chopped Pitted Dates
- 1 lg. Egg (lightly beaten)
- 1 t. Vanilla
- 4 c. Crisp Rice Cereal
- 1 (7 oz.) pkg. Shredded Coconut

Preparation
Step 1
Combine butter and next 3 ingredients in a saucepan. Cook over low hear, stirring continually 16 to 18 minutes, until sugar dissolves and mixture thickens. Remove from heat and stir in vanilla and cereal. Cool.
Shape into 1-in. balls. Roll in shredded coconut.
Store in airtight container up to 1 week.
