Chocolate-Raspberry Cheesecake

Heat oven to 350 degrees. Wrap outside of 9" springform pan with heavy duty foil
- CRUST:
- 2 packages pure butter shortbread cookies (5.3oz) -- crushed (about 1 1/4 cups)
- 4 tablespoons unsalted butter -- melted
- 1/4 cup raspberry preserves -- melted
- CHEESECAKE:
- 1 package frozen raspberries (10oz) -- thawed
- 3 packages cream cheese (8oz each) -- softened
- 1/2 cup unsalted butter -- softened
- 1 cup sugar
- 2 tablespoons all purpose flour
- 1/2 cup sour cream
- 2 teaspoons lemon juice
- 2 each eggs
- TOPPING:
- 6 ounces semisweet chocolate -- chopped
- 2 tablespoons light corn syrup
- 2 tablespoons unsalted butter -- softened
- 3/4 cup whipping cream
- 1 1/3 cups fresh raspberries (optional)
Brownie Biscotti

Preheat oven to 375°. Line a baking sheet with parchment or waxed paper
- Topping:
- 1/3 Cup butter, softened
- 2/3 Cup sugar
- 2 eggs
- 1 tsp. PURE VANILLA EXTRACT
- 13/4 Cups all-purpose flour
- 1/3 Cup COCOA POWDER (NATURAL or DUTCH PROCESS)
- 2 tsp. baking powder
- 1/2 Cup miniature semisweet chocolate chips
- 1/4 Cup walnuts or pecans, chopped
- 1 egg yolk, beaten
- 1 TB. water
Potato Pancetta Fritata

Preheat the oven to 350 degrees F
- 2 ounces pancetta, medium diced
- 1 tablespoon olive oil
- 7 tablespoons unsalted butter, divided
- 2 cups Yukon Gold potatoes, 1/2-inch-diced (4 potatoes)
- 8 extra-large eggs
- 15 ounces ricotta cheese
- 3/4 pound Gruyere cheese, grated
- 1/2 cup whole milk
- 1/3 cup all-purpose flour
- 3/4 teaspoon baking powder
- 2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
- 6 fresh basil leaves, julienned
Apple Delight

Preheat oven to 350°. Combine the crust ingredients and beat well
- Crust:
- 2 Cups baking mix*
- 1/4 Cup sugar
- 2/3 Cup milk
- 2 TB. vegetable oil
- 1 egg
- Filling:
- 1 8-oz. pkg. cream cheese, softened
- 1/4 Cup sugar
- 1 egg
- 1/2 tsp. PURE VANILLA EXTRACT
- Topping:
- 2 1/2 Cups 1/4-inch thick apple slices (peel if desired), about 4 apples
- 2 tsp. sugar (VANILLA SUGAR would be nice)
- 1/2 tsp. GROUND NUTMEG
- 1/4 tsp. PENZEYS CINNAMON
- 1/4 tsp. KOSHER-STYLE FLAKE SALT
- Homemade Baking Mix:
- 2 Cups flour
- 3 tsp. baking powder
- 1 tsp. salt
- 2 TB. shortening or butter

- 1/2 small onion, peeled

- 3 ounces/100 g cheese, grated or mashed
