Zucchini Bread

- 1/4 cup vegetable oil
- 1 cup light brown sugar
- 1 1/2 cups all-purpose flour
- 1 teaspoon ground cinnamon

- 1/2 teaspoon salt
- 1 egg
- 1 cup finely shredded unpeeled zucchini
- 1/2 cup toasted walnut pieces
- 1/2 teaspoon lemon zest, finely chopped

Requires sitting for one month before eating
- If using fresh picked olives –
- Curing: Make one cut in olive down to pit. Soak for 10 days in a brine solution of 1 cup kosher salt to one gallon of water, changing brine daily.
- Rinse and soak in water 2 additional days, changing daily.
Chocolate Velvet Cake (Mayonnaise Cake)

- Cake:
- 2 1/4 cups unsifted flour
- 1 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1 2/3 cup sugar
- 3 eggs
- 1 teaspoon vanilla
- 1 cup Hellmann's Real Mayonnaise
- 4 squares (1 ounce each) Baker's unsweetened chocolate, melted
- 1-1/3 cups water
- Crunchy Topping:
- 3/4 cup firmly packed brown sugar
- 1/4 cup margarine
- 3 tablespoon milk
- 1 1/3 cups shredded coconut
- 1/2 cup chopped walnuts.
Italian Mozzarella Wings
