Crystal Light Lemon pie

Beat the first three ingredients until mixed well and thick
- 1 14-ounce can sweetened condensed milk
- 1 Crystal Light lemonade packet that makes 2 quarts
- 1 regular container of Cool Whip, thawed
- 1 graham cracker crust pie shell

Mix all seasoning ingredients in a bowl
- For the Rub:
- 2 tablespoons freshly ground coffee
- 2 tablespoons kosher salt
- 2 tablespoons paprika
- 1 tablespoon ancho chile powder
- 1 tablespoon dark brown sugar
- 1 teaspoon oregano
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon ground black pepper
- 1/2 teaspoon cocoa powder
- 1/2 teaspoon coriander
- 2 racks spare ribs preferably St. Louis cut
- Stout barbecue sauce (optional)
