Easy Oatmeal Apple Crisp

- Apple Filling:
- 6 cups cubed or sliced tart cooking apples
- 2 tablespoons pure maple syrup
- 1/2 teaspoon ground cinnamon
- Crisp Topping:
- 3/4 cup old fashioned rolled oats
- 1/4 cup whole wheat flour
- 1/4 cup packed dark brown sugar or sucanat
- 1/4 cup chopped almonds or pecans
- 3/4 teaspoon ground cinnamon
- 1/8 teaspoon ground ginger
- 1/4 cup butter, melted
Twice Baked Jalapeno Sweet Potato Recipe

Preheat oven to 375 degrees F
- 6 medium sweet potatoes (6 oz each), washed & pat dried
- 3/4 tsp salt + more for baking potatoes
- 2 slices of organic and nitrate-free bacon, diced (optional & skip for vegetarian version)
- 2 jalapeños, seeds removed & diced
- 3 large garlic cloves, crushed
- 3/4 cup any cheese, shredded (I used white cheddar)
- 1/3 cup plain Greek yogurt, non-fat
- 1/2 cup green onions, chopped
- Cooking spray (I use Misto)
- Salsa and Greek yogurt, for garnish (optional)

- 1 tablespoon flour
- 3 tablespoons butter
- 1/2 cup chicken broth
- 1/2 cup milk

- 12 eggs
- 1-2 tsp any seasoning you like that’s good with eggs – Tuscan, salt/pepper/garlic powder, etc.
- 1-2 cups low fat shredded cheese or feta cheese
- Optional: 3 green onions diced small. Chopped veggies such as bell pepper, mushroom, onion, grated carrot, etc. Crumbled cooked bacon, lean ham, or crumbled cooked turkey sausage
Slow Cooker Spicy Pumpkin Chicken Corn Chowder

In a medium skillet, heat the oil over medium high
- 1 cup Red Onion, chopped
- 1 teaspoon Olive Oil
- 1 pound Red New Potatoes, scrubbed and cut into bite-size pieces
- 2 cup Frozen Corn Kernels
- 1/4 cup Flour (gluten-free or regular)
- 6 cups Low Sodium Chicken Broth
- 2 cups Rotisserie Chicken, shredded (home cooked chicken may also be used)
- 1 15-ounce can Pumpkin (unseasoned); or the equivalent homemade
- 1 canned Chipotle Pepper, diced
- 1 teaspoon Adobo Sauce (from the can of chipotle peppers)
- 1/4 Heavy Cream
- Salt and Pepper to taste
- Optional Garnish: crumbled bacon and torn cilantro leaves

- 1 1/2 cups white whole-wheat flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/2 teaspoon salt
- 1/4 cup butter (1/2 stick), softened (but not melted)
- 1/2 cup honey
- 1 egg
- 1 teaspoon pure vanilla extract
- 1 1/4 cup unsweetened applesauce
- 3/4 cup carrot shreds (I used a cheese grater)
