Pumpkin Spice Smoothie

1. Pre-freeze pumpkin puree by dividing 1 (15 oz
- 1/2 c. vanilla yogurt (not plain)
- 2 oz. frozen pumpkin puree (or 2 pumpkin puree "ice cubes")
- 1/2 frozen banana, cut into 1-inch chunks
- 1-2 Tbsp. maple syrup
- 1/4 tsp. pumpkin pie spice
- 1 cinnamon stick for garnish
White Chicken Lasagna

Preheat the oven to 400 degrees F
- 4 tablespoons butter
- 2 tablespoons whole wheat flour
- 3 cups milk
- 8 oz whole-wheat lasagna noodles
- 2 cups cooked, diced or shredded chicken (I love to make mine in the crockpot)
- 4 cups loosely packed, sliced spinach leaves
- 6 ounces cream cheese, softened and cut into 1" chunks
- 1/2 cup whole wheat breadcrumbs
- 1 teaspoon salt
- Pepper, to taste
- 1/4 teaspoon ground nutmeg
- 2 cloves garlic, minced
- 1/2 cup chopped, fresh parsley
- 1 cup freshly grated parmesan cheese, divided
Clean Eating Zucchini Bread

Preheat oven to 350 degrees F
- 2 cups whole wheat flour
- 2 teaspoons baking soda
- 1/4 teaspoon nutmeg
- 2/3 cup honey
- 1 generous cup grated zucchini (about 1 large zucchini)
- 2 tablespoons unsweetened apple sauce
- 2 tablespoons safflower or olive oil + extra for oiling the pans
- 1 whole egg
- 1 egg white
- 1 tablespoon fresh lemon zest
- 3/4 cup plain, non-fat yogurt
Two Minute Shrimp Scampi

Combine frozen shrimp with olive oil, garlic, basil and hot sauce
- 10 large frozen shrimp (peeled and deveined)
- 1/2 cup spinach leaves, chopped
- 1-2 tsp olive oil
- 1 clove garlic, minced
- curry powder to taste
- 1/2 tsp dried basil
- 1 or 2 splashes of hot sauce
- sesame seeds (optional)
Avocado Corn & Tomato Salad

1. Combine the corn, avocado, tomatoes and onion in a large glass bowl
- Salad:
- 2 cups cooked corn, fresh or frozen
- 1 avocado cut into 1/2 inch cubes
- 1 pint cherry or grape tomatoes, halved
- 1/2 cup finely diced red onion
- Dressing:
- 2 tablespoons olive oil
- 1 tablespoon fresh lime juice (or more to taste)
- 1/4 cup chopped cilantro
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
Vanilla Chai Breakfast Shake

Combine all ingredients and blend until smooth
- 1 very-ripe frozen banana (substitution: banana-free shake)
- 1 cup milk of choice (or less, for a thicker shake)
- 1/2 tsp powdered ginger
- 1/2 tsp cinnamon
- tiny dash each: pepper, cardamom, ground cloves, and nutmeg (You can omit any/all if desired. Or omit all the spices and simply brew your milk with a chai tea bag. Then chill before blending. Note: I detest pepper, so I never add it.)
- 1/4 tsp pure vanilla extract
- optional: sweetener if desired
- optional: feel free to add some coconut milk ice cream if desired!
Jalapeno Popper Spread

In a large bowl, beat the first five ingredients until blended; spread into an ungreased 9-in
- 2 packages (8 ounces each) cream cheese, softened
- 1 cup mayonnaise
- 1/2 cup shredded Monterey Jack cheese
- 1/4 cup canned chopped green chilies
- 1/4 cup canned diced jalapeno peppers
- 1 cup shredded Parmesan cheese
- 1/2 cup panko (Japanese) bread crumbs
- Sweet red and yellow pepper pieces and corn chips
Spinach, Mushroom & Feta Crustless Quiche

Preheat your oven to 350 degrees
- 8 oz. fresh mushrooms
- 1/2 tsp minced garlic
- as needed non-stick spray
- 1 (10 oz.) box frozen spinach
- 4 large eggs
- 1 cup milk
- 2 oz. feta cheese
- 1/4 cup grated parmesan
- 1/2 cup shredded mozzarella
- to taste salt & pepper
Whole Wheat Berry Coffee Cake

Preheat oven to 350 degrees F and grease 8" x 8" square baking dish with 2 tsp coconut oil
- Cake:
- 2 large eggs, at room temperature*
- 1/3 cup maple syrup
- 1 cup applesauce, unsweetened
- 1/4 cup coconut oil + 2 tsp for greasing, at room temperature**
- 2 cups whole wheat or spelt flour
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp salt
- 2 cups any berries, fresh or frozen (I used these)***
- Crumb Topping:
- 1/2 cup quick or rolled oats
- 1/2 cup walnuts, coarsely chopped****
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 2 tbsp maple syrup
- 1 tbsp coconut oil
- Drizzle:
- 1/2 cup canned coconut milk, light or full fat*****
- 1 tbsp maple syrup
Simple Balsamic Vinaigrette

Beat the vinegar in a bowl with the optional sugar, garlic, salt and pepper until sugar and salt dissolves
- 1/4 cup balsamic vinegar
- 2 teaspoons dark brown sugar, optional*
- 1 tablespoon chopped garlic
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 3/4 cup olive oil
