Quick and Healthy Peanut Chicken Soba Noodles

Bring medium pot, filled half with water, to a boil
- 1/2 cup soy sauce, low sodium
- 1/2 cup water
- 2 tbsp honey
- 2 tbsp rice vinegar
- 2 tbsp peanut butter, unsalted
- 2 tsp cornstarch
- 1 tsp sesame oil
- 2 large garlic cloves, crushed
- 6 oz soba noodles (brown rice noodles would work too)
- 1.5 lbs boneless & skinless chicken breasts, thinly sliced
- 2 large bell peppers, cut into thin strips
- 4 cups kale, coarsely chopped & packed
- 1/2 cup peanuts, unsalted
- 3 green onion sprigs, chopped
- 1/4 tsp red pepper flakes or to taste
Cheesy Hash Brown Casserole (like Cracker Barrel’s!)

Preheat the oven to 350 degrees F
- 6 tablespoons butter + extra for greasing the pan
- 1/3 cup diced onion
- 1 clove garlic, minced
- 4 tablespoons whole wheat flour
- 1 1/2 cups milk
- 1/2 teaspoon salt
- Pepper, to taste
- 2 cups freshly grated mild cheddar cheese
- 1 pound frozen hash browns (no need to defrost), be sure to buy a brand with only 1 ingredient - potatoes
Veggie Loaf Cake

1. Preheat oven to 375 degrees
- 1.5 cups egg whites
- 2 eggs
- 1/2 cup low-fat cottage cheese
- 1/4 cup coconut flour
- 3/4 cup oat flour
- 1/2 cup each, chopped: onion, zucchini, red pepper, tomatoes, mushroom

Combine the beef, onion, pepper, spices, tomatoes, broth and potatoes in your crock (I used a 5 quart)
- 1 pound lean ground beef, browned
- 1/2 cup chopped onion
- 1/2 cup chopped bell pepper
- 1 can diced tomatoes (14.5 ounce)
- 1 teaspoon salt
- 1 teaspoon oregano
- 1/2 teaspoon pepper
- 3 cups beef broth
- 4 cups diced potatoes (yukon gold preferable)
