One of my favorite ‘famous’ recipes is Cincinnati chili
- 2 lbs. ground beef
- 3 large onions, chopped (3 cups)
- 3 cloves garlic, minced
- 1 15-oz can tomato sauce
- 1 C. beef broth
- 2 Tbsp. chili powder
- 2 Tbsp. semisweet chocolate pieces
- 2 Tbsp. vinegar
- 2 Tbsp. honey
- 1 Tbsp. pumpkin pie spice
- 1 tsp. salt
- 1 tsp. ground cumin
- 1/2 tsp. ground cardamom
- 1/4 tsp. ground cloves
- 2 15 1/2 oz. cans kidney beans
- 4 C. shredded cheese
- 16 oz. fettuccine
Cuban Halibut

Set oven to broil; place halibut in a large bowl
- 1 lb halibut
- 1 tsp orange zest
- 1 tsp lime zest
- juice 1/2 lime
- 1/4 tsp sea salt
- 1/8 tsp ground black pepper
- 1 tsp peanut oil
- 1/2 cup diced onion
- 1 tsp ground cumin
- 1 tsp dried oregano
- 1/4 tsp sea salt
- 1/8 tsp ground black pepper
- 1 clove garlic, crushed
- 1 bunch or bag spinach, 9 oz, roughly chopped
- 1 cup uncooked quinoa
- 1 cup cooked black beans
- 1 orange, sectioned, with juice

- 1 lb turkey breast cutlets (or boneless, skinless chicken breasts or chicken tenders)
- 1/2 tsp kosher salt
- 3/4 tsp black pepper

- 1 pkg (8 to 10 oz) white button mushrooms, trimmed and sliced
- 3 cloves garlic, minced
- 1/4 tsp crushed red pepper flakes
- 1/3 cup all-purpose flour or whole-wheat flour
- 3 cups lowfat unsalted or reduced-sodium chicken broth
- 8 oz whole-wheat pasta (about 1/2 a standard box; angel hair, spaghetti, or linguine work best)

Slow Cooker Adobo Chicken

- 1 -2 lbs boneless skinless chicken breasts
- 1 small sweet onion, sliced
- 3 cloves garlic chopped or 3 tsp minced garlic
- 1/2 cup low sodium soy sauce
- 1/4 cup white vinegar
- 1/4 tsp ground peppercorns
- 2 bay leaves

- 1 lb. squash, shredded
- 1/2 lb. cooked linguine
- 1 //2 c. sliced almonds, toasted
- 1 Tbs. lemon juice

Florida Falling Cake

Mix and bake cake according to box instructions (with pudding mix and coconut extract added)
- 1 box yellow cake mix (I usually buy anything but the cake mixes that already have pudding in the mix)
- 1 regular box of instant lemon pudding mix
- 1 tablespoon coconut extract
- ¼ cup of fresh squeezed orange juice (approximate)
- 1 cup of confectioner's sugar (approximate)

- 1 (14 ounce) can beef broth
- 1/2 cup packed brown sugar
- 3 1/2 tablespoons chili powder
- 1 tablespoon cumin seeds
- 1 tablespoon unsweetened cocoa powder 1 teaspoon dried oregano
- 1 teaspoon ground cayenne pepper
- 1 teaspoon ground coriander
- 1 teaspoon salt
- 4 (15 ounce) cans kidney beans
- 4 fresh hot chile peppers, seeded and chopped
Spicy Sweet Potatoes

- 1 yellow cake mix
- 1 (3.5 oz) box of instant vanilla pudding
- 1 tablespoon poppyseeds
- 1/2 cup orange juice (pineapple, lemon or lime juice also work).
- 1/2 cup oil
- 1 cup sour cream (can use reduced fat)
- 4 eggs
- GLAZE
- 1 cup sugar
- 1/4 cup orange juice (or same juice you used in the cake)
- 1/2 cup butter (1 cube)
