Preheat the oven to 350 degrees F
- Crust:
- 1 1/4 cups dry-roasted, salted peanuts
- 1/2 cup granulated sugar
- Pinch ground cloves
- 1/4 cup unsalted butter, melted
- 6 ounces bittersweet chocolate
- 1/4 cup heavy cream
- Filling:
- 1 1/2 cups milk
- 2 large eggs
- 1 cup confectioners' sugar
- 2 tablespoons cornstarch
- Pinch fine salt
- 4 ounces cream cheese, cut into pieces
- 1/2 cup creamy peanut butter
- 1 teaspoon pure vanilla extract
- Topping:
- 2 ounces bittersweet chocolate
- 1 1/4 cups heavy cream, chilled
- 1 tablespoon confectioners' sugar
Greek Stuffed French Bread

- 1 loaf french bread
- 1 pound lean ground lamb
- 2 finely chopped shallots

Tuscan Spinach Pie

- For the crust
- 18 ounces (about 3 cups) "OO" or all-purpose flour
- 9 ounces butter (2 sticks plus 2 tablespoons) unsalted butter
- 7/8 cup granulated sugar
- 4 large egg yolks
- 2 teaspoons baking powder
- Zest of 1 lemon
- 1/4 teaspoon salt
- For the filling
- 10-12 ounces frozen spinach or 1 pound fresh baby spinach
- 8 ounces blanched almonds
- 4 large eggs, separated
- 2/3 cup granulated sugar
- 2 1/2 ounces minced candied citron or lemon peel
- 1/4 cup Marschino or other aromatic liqueur

Chiffonade the spinach
- 8 whole wheat or flour tortillas
- 2 cups fresh spinach
- 1 red onion
- 1 jar roasted red peppers - opt.
- 1 can black olives or pitted Kalamata olives
- 2 cups shredded mozzarella cheese
- 1/2 cup feta cheese crumbles
- 1 1/2 tablespoons fresh chopped oregano (or 2 teaspoons dried)

Philly Cheesesteak Pull-Apart Sliders

Place steak in freezer for 20-30 minutes to make the meat easier to slice
- 3 lb. rib eye steak
- 2 tbsp. vegetable oil
- 2 bell peppers, thinly sliced
- 1 large yellow onion, sliced into half moons
- 10 slices provolone
- 15 mini hoagie rolls (or dinner rolls)

- 1 ⁄2 cup white vinegar
- 1 ⁄4 tsp. crushed red chile flakes
- 14 cloves garlic, minced
- Kosher salt and freshly ground black pepper, to taste
- 1 ⁄3 cup canola oil
- 4 cups cold cooked white rice
- 1 scallion, thinly sliced, for garnish

Potato Crisps with Chive-Sour Cream Dip

Step 1 Preheat the oven to 350°
- 2 tablespoons snipped chives
- Freshly ground pepper
- Kosher salt
- 2 tablespoons freshly grated Parmigiano-Reggiano cheese
- 1 /2 cup low-fat sour cream
- 3 cups canola oil
- Thick peelings from 3 pounds of Yukon Gold or russet potatoes (roughly 1-by-3-inch strips)
- How to Make It

- Transfer the potato strips to a baking sheet and sprinkle them with the grated Parmigiano-Reggiano. Bake for 3 to 4 minutes, just until the cheese is melted. Let the crisps cool, then transfer to a bowl.
- Step 3
- In a blender or processor, puree the sour cream with the chives and a pinch of salt and pepper until the chives are finely chopped. Transfer the dip to a bowl and serve alongside the potato crisps.
- Make Ahead
- The chivesour cream dip can be refrigerated overnight.
