- 2 cups store-bought ricotta
- 1 cup cold heavy cream

Buttermilk Roast Chicken

Place the chicken drumsticks in a large freezer bag, and add the buttermilk and 1/4 cup of oil
- 12 chicken drumsticks (approximately 3 pounds total weight)
- 2 cups buttermilk
- 1/4 cup plus 2 tablespoons vegetable oil
- 2 cloves garlic, bruised and skins removed
- 1 tablespoon crushed peppercorns
- 1 tablespoon Maldon salt, sea salt or 1 1/2 teaspoons table salt
- 1 teaspoon ground cumin
- 1 tablespoon maple syrup
Meatball Sub Bites

- 12 frozen bread dough dinner rolls (about 1 1/2 ounces each)

Linguine with Clam Sauce and Vegetables -Pepin

Bring 4 quarts of salted water to a boil in a large pot
- 1 pound linguine
- SAUCE
- 2 tablespoons olive oil
- 1 tablespoon unsalted butter
- 2 medium onions, coarsely chopped (1 cup)
- 1 teaspoon fresh oregano leaves
- 4 –6 large garlic cloves, sliced (1/4 cup)
- 2 dozen cherrystone clams, shucked, cut in half with scissors, and kept in their juices
- 1/2 cup dry white wine
- 1/2 teaspoon freshly ground black pepper
- VEGETABLES
- 1 tablespoon peanut oil
- 1 tablespoon unsalted butter
- 8 –10 asparagus spears, trimmed, peeled, and cut into 1-inch pieces (1 cup)
- 1 1/4 cups chopped mushrooms (4 ounces)
- 2 medium zucchini, trimmed and cut into 1/2-inch dice (1 1/2 cups)

Make-Ahead Fried Chicken
