Asian Beef/Lamb Lettuce Wraps

Apart from being a shrill, shouting TV chef, Gordon Ramsay has long been a big influence in my cooking
- 12 leaves lettuce (iceberg, romaine, Boston or green leaf)
- 1 tablespoon vegetable oil
- 1 red bell pepper, seeded and diced
- 1 yellow onion, diced
- 1 lb. ground beef/lamb
- 1/4 tsp. each salt and pepper
- 2 garlic cloves, minced
- 1 tablespoon soy sauce
- 1/4 cup hoisin sauce
- 1-2 Tbsp. chili sauce (such as Sambal Oelek*)
- 1 teaspoon ground ginger
- 1 tablespoon rice wine vinegar
- 4 green onions, chopped
PEPPERMINT BARK

Place candy canes or peppermint candies in mini-food processor and pulse until in small pieces
- 12 oz high quality semi sweet chocolate
- 1 pound white chocolate (with cocoa butter)
- 1/2 teaspoon peppermint extract
- 3/4 cup candy canes or peppermint candy, crushed
Crisp Chicken Schnitzel

Mince anchovies and garlic and mix with a large pinch of salt until you get a rough paste
- 6 6 6 anchovy fillets
- 1 1 1 small garlic clove
- Kosher salt and freshly ground black pepper
- 1 grated zest of 1 lemon
- 2 1/2 2 1/2 1/2 tablespoons fresh lemon juice
- 7 to 8 7 to 8 to tablespoons extra virgin olive oil, to taste
- 2 2 2 eggs, beaten
- 1 1/2 1 1/2 1/2 cups panko or other unseasoned bread crumbs
- 1/2 1/2 1/2 cup flour
- 1/8 1/8 1/8 teaspoon cayenne
- 1/8 1/8 1/8 teaspoon freshly grated nutmeg
- 1 1/4 1 1/4 to 1/8-inch chicken cutlets, pounded to 1/8-inch thick
- Safflower, peanut or vegetable oil, for frying

- 2 sprigs rosemary, leaves stripped

- 2 tablespoons tomato paste
- 1 cup dry white wine
- 2 quarts chicken stock
- 3 tablespoons butter

Chocolate Mayonnaise Cake

- 2 cups all-purpose flour
- 2/3 cup unsweetened cocoa powder
- 1 1/4 teaspoons baking soda
- 1/4 teaspoon baking powder
- 1/2 teaspoon espresso powder (optional, for enhanced chocolate flavor)
- 3 eggs, at room temperature
- 1 2/3 cups sugar
- 1 teaspoon vanilla extract
- 1 cup mayonnaise
- 1 1/3 cups water
