Mediterranean Mac 'n Cheese

SAUSAGE AND PASTA: Place the sausage and 1 cup of water in a medium skillet over high heat
- 3 spicy Italian-style sausages (about 10 ounces total)
- 1 tablespoon olive oil
- 1/2 pound whole-wheat macaroni or your favorite small-shaped pasta
- 1 tablespoon butter
- 1 tablespoon olive oil
- 2 1/2 tablespoons flour
- 1 cup milk (low fat or whole)
- 1 cup heavy cream (or milk, if lighter version is preferred)
- 1 1/2 tablespoons chopped fresh basil
- 1 1/2 tablespoons finely chopped fresh rosemary
- 2 1/2 tablespoons finely chopped fresh parsley
- 1/2 cup finely chopped scallions (white and green parts)
- 3 tablespoons thinly sliced sun-dried tomatoes
- 1 cup grated young Asiago cheese
- Salt and freshly ground black pepper, to taste

- 2 cups Mayo
- 1/3 cup Red Onion,minced
- 1/2 cup Italian Parsley,chopped
- 1 TB Tarragon (fresh over dried),chopped
- 2-1/2 TB Sweet Relish (Dill Relish can be substituted, but leave out capers).
- 2 TB Worchestershire Sauce
- 1-1/2 TB schmushed Capers
