Baked Little Potatoes Casserole

An easy and scrumptious Baked Little Potatoes Casserole made from the idea of a baked potato fully loaded
- 1 lb. Little Potato Company Blushing Belles
- 1 lb. Little Potato Company Baby Boomers
- 1 cup light sour cream, divided
- 3 cups light grated mixed cheddar cheese, divided
- 1/2 cup regular grated cheddar cheese
- 6 green onions, chopped and divided, plus more for garnish if needed
- 375 gm. package bacon, cut into lardons and crisped
- Fresh grating black pepper
Molasses Candy - Papa in Nevada

Boil all together until a few drops in cold water becomes brittle
- Burnt Molasses Candy:
- 2 2 2 c. dark molasses
- 1 1 1 c. brown sugar
- 2 2 2 tbsp. butter
- 1/3 1/3 1/3 c. water
- 1 1 1 tbsp. vinegar
- Pinch Pinch of baking soda
- DIRECTIONS
- to to together until a few drops in cold water becomes brittle. Pour on a buttered dish and allow to cool. When cool enough to handle, rub butter on hands and pull (small portions at a time) until light in color. Cut in small pieces

Instructions Wash your potatoes, if necessary, and poke a few times with a knife
- 5-7 small potatoes
- 1 1/2 Tbsp. vegetable or canola oil, divided
