Southern Pinto Beans Recipe

- 1 - Pound bag of dry Pinto Beans. Must be soaked 6-8 hours or overnight. Plan accordingly
- 1 - whole Onion, peeled
- 3 - slices of pork Fatback, (approx.4oz total weight)
- 1/2 - teaspoon of Cayenne Pepper
- Salt and Pepper to taste

Crockpot Manwich Chicken

- 2 to 4 chicken breasts, uncooked (can use frozen, fresh or any other pieces of chicken in this recipe)
- 1 (15.5 ounce) can Manwich Original Sloppy Joe Sauce
- 1/4 cup salsa
- 3 to 4 tablespoons honey, optional
- 1 small onion, chopped

- 2 to 3 quarts vegetable oil for frying

"CORNED BEEF HASH SOUP

Instructions Heat the oil in a large saucepan
- 1 tbsp olive oil
- 1 medium onion, peeled and diced
- 1 x 340g (12 oz) tin of corned beef, roughly chopped
- 3 beef stock cubes (Use gluten free cubes if required - I use Essential Cuisine beef stock powder for gluten free)
- 1 1/3 litres (5 1/2 cups) cold water
- 4 medium carrots, peeled and chopped into bite-size chunks
- 2 medium potatoes, peeled and chopped into bite-size chunks
- 1 small head cauliflower, chopped into small florets
- 1 tsp cider vinegar (or use the vinegar from a jar of beetroot or pickled cabbage as I often do)
- 1/4 tsp salt
- 1/4 tsp black pepper
- 2 tsp cornflour (cornstarch)
- 4 tsp cold water
- Freshly chopped parsley - to serve
