- 2 large green tomatoes, sliced 1/2 in. thick
- Coarse salt
- 3/4 cup all-purpose flour
- 1/2 tsp. ground black pepper, divided
- 2 large eggs, beaten
- 2 Tbsp. milk
- 1 cup panko bread crumbs
- 8-12 slices bacon
- 8 slices sourdough bread
- 1/4 cup mayonnaise
- 1/2 cup greens (arugula, spinach, lettuce)
- 2 ripe red tomatoes, sliced 1/2 in. thick
