Chicken or Pork Stir-Fry

1.Sprinkle skillet with oil or spray with Pam
- FOR THE STIR-FRY:
- •6 boneless skinless chicken breasts or pork cutlets, sliced
- •favorite oil or Pam spray
- •stir-fry sauce
- •frozen stir-fry veggies of choice, thawed
- •1-2 tbsp sesame seeds
- Stir-Fry Sauce:
- makes 1 cup
- •1/4 cup honey
- •1/4 cup soy sauce
- •1/2 cup water
- •1 tsp ground ginger
- •1 tsp ground garlic
- •1/4-1/2 tsp red pepper flakes
- •1 tbsp cornstarch
Sea Salt, Cashew and Milk Chocolate Chip Cookies

1. Sift together the cake flour, bread flour, baking soda, baking powder and salt into a large bowl and set aside
- 2 cups minus 2 tablespoons (8 1/2 ounces) cake flour
- 1 & 2/3 cups (8 1/2 ounces) bread flour
- 1 1/4 teaspoons baking soda
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons kosher salt
- 1 1/4 cups (10 ounces) unsalted butter, at room temperature
- 1 1/4 cups (10 ounces) light brown sugar
- 1 cup plus 2 tablespoons (8 ounces) granulated sugar
- 2 eggs
- 2 teaspoons vanilla extract
- 3 & 1/3 cups (20 ounces) milk chocolate chips
- 1 cup cashews, coarsely chopped
- Sea salt, for sprinkling
ROASTED TOMATO & TOMATILLO SALSA

- 2 roma tomatoes
- 2 medium jalapeño or serrano chiles
- 2 large garlic cloves, unpeeled
- 1/4 white onion, diced

- 1/4 bunch fresh cilantro, roughly chopped

- 1 tablespoon vegetable oil
- 1 large onion, sliced into 1/4-inch strips (about 2 cups)
- 2 red bell peppers, stem and core removed, sliced into 1/4-inch strips
- 2 green bell peppers, stem and core removed, sliced into 1/4-inch strips
- 3 tablespoons apple cider vinegar
- 3 tablespoons sugar
- Kosher salt and freshly ground black pepper
- 2 pounds sweet or hot Italian sausage

"Double Pie Crust made with Lard and Butter"

- 3 Cups All-purpose Flour

Crusty Tilapia with Pico de Gallo

Cut out the blood line from the center of the tilapia fillets leaving 2 pieces per serving
- FOR THE TILAPIA:
- 1 cup buttermilk
- hot sauce, to taste (I use about 1 good shake per person)
- 1/2 cup all-purpose flour
- 1/2 cup cornmeal, or masa harina
- 1 teaspoon salt
- 1/2 teaspoon cracked black pepper
- 4 tablespoons olive oil
- 4 tilapia fillets (about 6-8 ounces each)
- FOR THE PICO DE GALLO:
- 2 medium tomatoes, seeded and diced
- 1 small jalapeno, seeded and minced
- 1/2 small onion, diced small
- 2 tablespoons cilantro, chopped
- 1/2 teaspoon salt
- 1/4 teaspoon cracked black pepper
- 1 lime, zested and juiced
