- 3 dried New Mexico (Hatch) chilies, stemmed and seeded
- 3 dried Ancho chilies, stemmed and seeded
- 2 dried Cascabel chilies, stemmed and seeded
- 2 dried Chipotle chilies, stemmed and seeded
- 1 1/2 quarts chicken stock
- 4 pounds beef chuck roast, fat trimmed and cut into 2-3 large pieces
- kosher salt
- freshly ground black pepper
- 2 tablespoons vegetable oil
- 1 large onion, finely diced
- 4 cloves garlic, minced
- 1 tablespoon ground cumin
- 2 teaspoons dried oregano
- 1/2 teaspoon cinnamon
- 1/4 teaspoon ground allspice
Loaded Baked Potato Egg Rolls
