Pineapple Margarita

Add the tequila, Cointreau or Triple Sec, lime juice, pineapple juice, and sugar to the shaker
- 1 jigger (1 and 1/2 ounces) tequila (I used Jose Cuervo)
- 1/2 jigger (3/4 ounce) Cointreau or Triple Sec
- 1 jigger (1 and 1/2 ounces) lime juice (usually about 1 whole lime worth)
- 2 jiggers (3 ounces) pineapple juice
- 1/2 teaspoon sugar
- ice, for the shaker
- course salt, for the rim of the glass (kosher salt works well too)
- (optional) pineapple chunks, for garnish
"Quiche Lorraine

Make the quiche crust per the separate recipe below (also see video) or use frozen shortcrust pastry (recipe below)...
- Bacon Filling:
- 1 1 1 quiche crust, homemade or store bought (see separate recipe below)
- 1 1 15g tbsp / 15g butter
- 1 1 1 garlic clove , minced
- 1/2 1/2 1/2 onion, finely chopped (~1/2 cup)
- 200 200 6.5 0.5cm 2/3" 1/5") oz bacon, cut into small strips (1.5 x 0.5cm / 2/3" x 1/5")
- Egg Mixture
- 4 4 65g 2 (~55- 65g / 2 oz each)
- 300 300ml 1 1/4 1) 1/4 cups heavy cream (thickened cream) (Note 1)
- Pinch Pinch of salt & pepper
- Cheese:
- 1 1/4 1 1/4 150g cups / 150g grated gruyere cheese (or tasty, cheddar, monterey jack)
- Garnish (optional):
- 50 50g 2 / 2 oz bacon, chopped and cooked until golden

"Buttermilk Drop Biscuits With Garlic and Cheddar Recipe

Garlicky and cheesy buttermilk drop biscuits that go with any meal
- 9 ounces bleached all-purpose flour (1 3/4 cup plus 1 tablespoon; 255g)
- 1 ounce unsalted butter (2 tablespoons; 30g) (optional)
- 1/4 ounce fresh parsley or chives, finely chopped (2 tablespoons; 7 g)
- 1 tablespoon baking powder
- 2 teaspoons sugar
- 1 1/2 teaspoons (6g) Diamond Crystal kosher salt
- 1 1/2 teaspoons garlic powder
- 1 teaspoon onion powder
- 1/4 teaspoon sweet paprika
- 1/4 teaspoon cayenne
- 6 ounces sharp cheddar, finely grated (3 3/4cups; 170g) (see note)
- 9 ounces cultured low-fat buttermilk (1 cup plus 2 tablespoons; 255g)
Beefy Vegetable Soup

In large dutch oven ( at least 6 quarts) heat olive oil on med-high heat until it shimmers
- 2 lbs. Flat Iron Steak, cut into 1" pieces (I used Certified Angus Beef)
- 1/2 TBS olive oil
- salt and pepper
- 1 large onion, diced
- 3-4 ribs of celery, chopped
- 2 cloves garlic, minced
- 1 lb. carrots, sliced
- 10 oz. fresh sliced mushrooms (I usually go with 20 oz. We like mushrooms)
- 1 tsp. dried thyme
- 1 - 2 TBS. tomato paste
- 1 - lb. baby Yukon gold potatoes, quartered
- 1 dried bay leaf
- 64 oz. beef broth
- 1- 14 oz. can diced tomatoes
- 1/2 cup red wine (your favorite variety is fine!)
- 2 cups frozen mixed vegetables-carrots, green beans, peas and corn (I eyeballed it)
- 1 TBS apple cider vinegar
Lemon and Chive Pan Sauce

1. Add shallot to now-empty skillet and cook over medium heat until softened, about 2 minutes
- 1 medium shallot , minced (about 3 tablespoons)
