"Fresh Summer Rolls with Easy Peanut Dipping Sauce

Directions: First, read through the post above to learn some tips/tricks for making these summer rolls
- Easy Peanut Dipping Sauce:
- 1/4 1/4 1/4 cup creamy peanut butter
- 1 1 1 Tablespoon hoisin sauce2
- 2 2 2 teaspoons soy sauce
- 1 1 1 clove garlic, mashed (or about 1 teaspoon minced)
- 1 1 1 teaspoon Sriracha sauce or a chile garlic sauce, optional for spice
- 1-2 1-2 1-2 Tablespoons warm water, or more as needed
- optional garnish: crushed peanuts, sprinkle of crushed red pepper
- Summer Rolls:
- 10 10 10 spring roll rice paper wrappers
- 1 1 1 large carrot, peeled and julienned
- 1 1 1 large cucumber, julienned (you can peel, but I don't)
- 1/2 1/2 1/2 of a large red pepper, julienned
- 1/3 1/3 1/3 cup chopped purple cabbage
- 1 1 1 ounce cooked rice noodles/rice vermicelli (optional)
- 1 1 1 avocado, sliced
- handful handful fresh cilantro (and/or mint, basil)
- 5 5 5 large green lettuce leaves (romaine, butter, etc), torn in half
- 20 20 20 medium cooked shrimp, peeled and sliced in half length-wise
- sesame seeds for garnish (optional)

- 40 Oreo cookies (one 15.3 oz pkg)
- 5 Tbsp unsalted butter, melted

- 6 oz bittersweet chocolate chips or chopped chocolate (1 cup. I recommend Ghirardelli)
- 1/4 cup unsalted butter
- 1/4 cup water, at room temperature
- 1 Tbsp unsweetened cocoa powder
- 1/4 tsp salt
- 1 Tbsp vanilla extract
- 6 large eggs at room temperature, separated
- 1/2 cup packed light-brown sugar
- 1/2 cup granulated sugar
- Chocolate Pudding:
- 3/4 cup granulated sugar
- 1/2 cup unsweetened cocoa powder
- 1/3 cup cornstarch
- 1/4 tsp salt
- 4 large egg yolks
- 2 1/2 cups whole milk
- 3 Tbsp unsalted butter
- 3 oz bittersweet chocolate chips or chopped chocolate (1/2 cup)
- 2 tsp vanilla extract
- Whipped Cream Topping:
- 1 1/4 cups heavy cream
- 3 Tbsp granulated sugar

- Marinade:
- 6 Boneless Pork Chops, each cut into four lengthwise strips about 1/2 inch thick (original recipe said to cut into pieces about 1-2" square) (6 to 8)
- 1/2 Cup Yellow Mustard (not Dijon)
- 1/2 Cup Soy Sauce
- 1/4 Cup Lemon Juice
- 1/3 Cup Olive Oil (original Recipe Used 1/4 Cup Canola Oil)
- 1 T Garlic Powder (or Use Minced Fresh Garlic)
- 6 About 6 Drops Tabasco or 12 Drops Green Tabasco
- 1 Tsp. Cajun Spice Seasoning (i Recommend Tony Chachere's Creole Seasoning) (1 to 2)
- 1 T Chile Garlic Sauce (optional, sold by Asian foods)
- (The original recipe called for a small amount of Liquid Smoke, but I don't add that when I make it now)
