Ingredients

  • 600 g potatoes, diced
  • 50 ml nonfat milk
  • 200 g sweet potato, diced
  • 1 large carrot, diced
  • 1 onion, chopped
  • 500 g lean minced beef
  • 1/2 tsp ground cinnamon
  • 250 ml vegetable stock
  • 2 tomatoes, chopped
  • 100 g frozen peas
  • 1 tbsp tomato puree

Preparation

Step 1

Preheat the oven to 200 degrees C. Cook potatoes in boiling water for 10-15 mins or until tender. Drain, add milk and mash well. Set aside.

While the potatoes are cooking, in another saucepan cook the sweet potatoes and carrots for 10 minutes or until tender. Drain and mash.

Fry the onion, beef and cinnamon in a large saucepan for 5 minutes until mince is brown. Add stock, mashed sweet potato and carrot mixture, tomato puree and tomatoes and cook for 5 minutes. Add peas and cook briefly until defrosted, transfer to ovenproof serving dish. Top with the mashed potato and bake in the oven for 30 minutes or until golden.
