Hash Brown and Ham Casserole

1.In a large mixing bowl, combine the dairy sour cream and the condensed cream of chicken soup
- 1 16 -ounce carton dairy sour cream
- 1 10 3/4-ounce can condensed cream of chicken soup
- 1 32 -ounce package frozen, loose-pack hash brown potatoes
- 2 cups cubed cooked ham
- 8 ounces cubed American cheese
- 1/4 cup chopped onion (optional)
- 2 cups crushed cornflakes
- 1/2 cup butter or margarine, melted
- 1 cup shredded mozzarella cheese (4 ounces)

- Topping
- 5 tablespoons packed (2 1/4 ounces) light brown sugar
- 1 tablespoon all-purpose flour
- 1 tablespoon unsalted butter, softened
- 1 teaspoon ground cinnamon
- 1/8 teaspoon salt

- 2 cups (10 ounces)all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 (15-ounce) can unsweetened pumpkin puree
- 1 teaspoon salt

- 1/4 teaspoon ground nutmeg
- 1/8 teaspoon ground cloves
- 1 cup (7 ounces) granulated sugar
- 1 cup packed (7 ounces) light brown sugar

- 4 large eggs
- 1/4 cup buttermilk
- 1 cup walnuts, toasted and chopped fine

- 1/4 cup chopped onion
- 1/4 cup chopped green pepper
- 1 can crushed pineapple, well drained

- Cupcakes:
- 1 1/2 cups all-purpose flour
- 3 tbsp. cocoa powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 3/4 cup sugar
- 8 tbsp. unsalted butter, at room temperature
- 1 large egg
- 1/2 cup buttermilk
- 3/4 cup Coca-Cola
- 1/4 tsp. maraschino cherry juice
- 2 tsp. vanilla extract
- Maraschino cherries, stemless
- Glaze:
- 1 cup confectioners’ sugar
- 2 tbsp. Coca-Cola
- Topping:
- 2/3 cup heavy cream
- 3-4 tbsp. powdered sugar
- Maraschino cherries

- 2 tablespoon Dijon mustard
- 8 (1/2-inch-thick) slices challah bread
- 1 pound thinly sliced black forest deli ham
- 4 slices Muenster cheese
- 3 large eggs
- 1/4 cup milk
- Garnish: confectioners' sugar

- 2 pkg. cream cheese, room, te,perature (8 ounces each)
- 1 1/2 cups shredded extra-sharp Cheddar (5 ounces)
- 1 1/2 cups shredded pepper Jack cheese (5 ounces)
- 1/4 cup mayonnaise
- 1 jar sliced pimentos, drained and pressed to remove liquid (7 ounces)
- 1/4 cup sliced scallions
- Salt, pepper, and cayenne pepper to taste
- For Rolling:
- Crushed jalapeno potato chips and scallions, cooked bacon crumbles and chopped toasted pecans
Cheesy Scalloped Potatoes with Ham

1.Preheat the oven to 350°F
- 1 cup half-and-half
- 1/2 cup heavy cream
- 3 lbs Idaho potatoes, washed, peeled, thinly and evenly sliced
- 10-oz pre-cooked ham, diced
- 1 medium onion, thinly sliced
- 3 cups Monterey Jack cheese, shredded
- 3 cups cheddar cheese, shredded
- 1/2 tsp dried thyme
- 1/2 tsp kosher salt
- 1/4 tsp ground black pepper
Home Canned Tomato Soup

1. Puree the veggies in a food processor
- 8 quarts tomatoes, cored and chopped (fill an 8-cup glass measuring cup four times)
- 5 cups pureed onion
- 3.5 cups pureed celery
- 3.5 cups pureed peppers (mostly red with a bit of green)
- 2 cups pureed carrots
- 1 TB fresh basil leaves
- 1 bulb garlic
- 4 tsp unrefined sea salt
- 2 bay leaves
Oven-Fried Chicken Salad with Ranch Dressing

1. Preheat oven to 350 degrees
- 1 cup panko bread crumbs
- 1/3 cup all-purpose flour
- 2 egg whites, lightly beaten
- 2 boneless skinless chicken breasts
- 2 t. salt
- 1/4 cup peanut oil
- 1 head Bibb lettuce, torn
- 1 cup cherry tomatoes, cut in half
- 1/2 cup coarsely chopped toasted pecans
- 1/2 cup light Ranch dressing
