Eggplant and Tomato Gratin

Place tomatoes on a paper towel, sprinkle with 1/4 teaspoon salt and top with another paper towel
- 2 large tomatoes, in 1/2 inch slices
- 1/2 teaspoon salt
- 2 large eggplants (2lbs), in 1/2 inch slices
- 1/4 cup plain bread crumbs
- 3/4 teaspoon dried basil
- 2 cloves garlic, finely chopped
- 1/2 cup fat-free half-and-half
- 1 1/2 cups shredded low fat mozzarella cheese
- 1/2 cup grated Parmesan cheese
Dark Chocolate Frosting

Chocolate.. what more is there to say
- 18 oz (12 oz bag plus 1 cup) semisweet chocolate chips
- 1 1/2 cups heavy cream
- 1 tablespoon unsalted butter, room temp
- A pinch of salt
Frosting

- 1/2 cup Crisco or other solid shortening
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla extract
- 4 tablespoons warm water
- 1 pound confectioners' sugar
Royal Icing

Perfect for making cake decorations such as flowers, pedals, and character faces
- 2 Tablespoons Meringue Powder
- 1 pound bag of confectioners' sugar
- 1/3 cup very hot tap water
- 1/2 teaspoon cream of tarter (must be less then 1 year old or it is expired)
Sausage & Polenta

- 1 16oz log plain precooked polenta cut into 8 inch rounds
- 2 Tablespoons grated Pecorino Romano cheese
- 12 oz turkey sausage (about 4 links), casings removed
- 2 medium zucchini (8 oz), cut into 1 inch chunks
- 1 medium yellow pepper, cut into 1 inch chunks
- 1 cup marinara sauce
Roasted Apple Butter

Roasting the apples gives the butter a nice caramel flavor
- 8 medium McIntosh apples, (2 3/4 pounds), peeled, cored and quartered
- 2 cups unsweetened apple juice
Layered Mexican Chicken

A Weight Watchers Recipe. 12 servings, 6 points per serving
- 1 Spray olive oil cooking spray
- 2 lbs uncooked boneless, skinless chicken breast
- 30 oz canned black beans, drained & rinsed
- 3 cups fat-free sour cream
- 2 cups low-fat shredded Mexican cheese
- 8 oz chopped green chilies, 2 4 oz cans
- 2 tsp ground cumin
- 1/2 tsp black pepper
- 12 medium corn tortillas, cut into 2 inch strips
- Salsa, sour cream, guacamole, etc for toppings (additional points) if desired.
- WW Points: 6
- Note: Dish will last for 5 days in refrigerator, great for make ahead meals.
Scallion & Cheddar Popovers

The boyfriend is English thus we make lots of popovers
- 1 cup all-purpose flour
- 1/2 teaspoon salt
- 2 eggs
- 1 cup milk
- 1 cup shredded sharp cheddar cheese
- 3 scallions, trimmed & chopped
Chili Corn Bread Salad

Good dish for potluck events
- 1 package (8 1/2 oz) corn bread/muffin mix
- 1 4oz can chopped green chilies, undrained
- 1/8 teaspoon ground cumin
- 1/8 teaspoon dried oregano
- Pinch sage
- 1 cup mayo
- 1 cup (8 oz) sour cream
- 1 envelope ranch dressing mix
- 2 cans (15 1/4 oz each) kernel corn, drained
- 2 cans (15 1/4 oz each) pinto beans, rinsed and drained
- 3 medium tomatoes, chopped
- 1 cup chopped green pepper
- 1 cup chopped green onion
- 10 bacon strips, cooked and crumbled
- 2 cups (8 oz) shredded cheddar cheese
Vinaigrette

Store fresh-made vinaigrette in covered container in fridge for 3-4 days
- 2 tablespoons shallots
- 1 teaspoon Dijon mustard
- 1/4 teaspoon kosher salt & freshly ground pepper
- 6 tablespoons extra-virgin olive oil
