Lamb Sausage in Puff Pastry

Preheat the oven to 400 degrees F
- 1 pound fresh lamb sausage, 1/2 inch thick, in a coil
- 2 sheets (1 box) frozen puff pastry (preferably Pepperidge Farm), defrosted overnight in the refrigerator
- 2 tablespoons dijon mustard, plus more for dipping
- 1 egg, beaten with 1 tablespoon water or milk, for egg wash

- 1 .25 oz package active dry yeast
- 1 cup warm water
- 2 cups whole wheat flour
- 1/4 cup wheat germ
- 1 teaspoon salt

Bibb Lettuce & blue cheese salad with balsamic dressing

- 2 tablespoons walnut oil
- 2/3 cup chopped walnuts
- 2 tablespoons fresh lemon juice (about 1/2 lemon)
- Splash balsamic vinegar
- 2 heads Bibb lettuce, well washed, dried & torn into bite-size pieces
- 1/4 white onion, very thinly sliced
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1/2 cup shaved or crumbled Roquefort cheese or other blue cheese variety (about 2 1/2 oz)
Mushroom and Sausage Ragù with Polenta

- 8 ounces hot turkey Italian sausage
- 1/2 cup chopped onion
- 1 pound cremini mushrooms, sliced
- 2 large garlic cloves, minced
- 1/4 teaspoon kosher salt, divided
- 1 (14.5-oz) can no-salt-added diced tomatoes, undrained
- 2 1/2 cups fat-free, lower-sodium chicken broth
- 1 1/2 cups water
- 1 cup uncooked polenta
