Three-Cheese Tomato Tart

Serve as an appetizer, side dish, or as a light dinner with a side salad
- 1 Refrigerated pie crust
- 1 cup (4 oz) shredded mozzarella
- 1 package (8 oz) reduced-fat cream cheese
- 1 egg
- 2 tablespoons all-purpose flour
- 2 garlic cloves, minced or pressed
- 1/4 cup fresh basil leaves, snipped into small bits
- 3 plum tomatoes, thinly sliced
- 2 tablespoons (1/2 oz) Parmesan cheese, grated.
Meat Loaf Ole

Heat oven to 375 degrees. In large bowl combine tortilla chips & salsa
- 3/4 cup crushed tortilla chips
- 1/2 cup garden style salsa
- 1 lb extra-lean ground beef
- 1/4 teaspoon coarse ground black pepper
- 1 egg, slightly beaten
- 1/4 cup barbecue sauce
Orange (or Lemon) Snowball Cookies

- 2/3 cup unsalted butter
- 3/4 cup sugar
- 1 egg
- 1/2 cup + 1 tablespoon orange juice or lemonade
- 2 cups flour
- 1/4 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups confectioners' sugar, sifted
- 2 egg whites
- orange or lemon sugar (optional)
Low fat Orange Dream Cheesecake

Sprinkle crumbs on bottom of greased 8 or 9 inch springform pan or 9 inch pie plate
- 3 tablespoons crushed graham crackers
- 2/3 cup boiling water
- 1 pkg Orange flavor sugar free jello
- 1 cup low fat cottage cheese
- 1 (8oz) container fat free cream cheese
- 2 cups fat free cool whip, thawed
Warm Apple Cider

- 1 gallon cider
- 1/2 cup packed brown sugar (optional)
- 1/4 cup maple syrup
- 1 teaspoon nutmeg
- 4 cinnamon sticks
- 2 oranges, zest & juice
- 1/2 a bag of cranberries (about 1.2 cups)

- 1 1/2 lb ground beef
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 (14 1/2oz) can diced tomatoes
- 1/2 cup water
- 1 (15oz) cans red kidney beans
- 1 (15oz) cans black kidney beans
- 1/4 cup chili powder
- 2 teaspoons ground cumin
Garlic Mashed Root Vegetables

- 2 medium uncooked potato(es), peeled and quartered
- 2 medium carrot(s), peeled and quartered
- 8 oz butternut squash, peeled and cut into chunks
- 1 medium turnip(s), peeled and cut into chunks
- 5 clove(s) garlic clove(s), peeled (medium)
- 1/8 tsp table salt
- 1/4 cup(s) fat-free sour cream
- 1/2 cup(s) fat-free chicken broth, warmed
- 1/8 tsp black pepper, or to taste
- 1/8 tsp table salt, or to taste
Slow-Cooker Lasagna

In the stovetop-safe insert of slow cooker over medium heat, warm the olive oil
- 1 Tbs. olive oil
- 2 lb. Italian sausage, casings removed
- 2 jars (each 24 oz.) tomato sauce
- 2 cups water
- 1 lb. whole-milk ricotta cheese
- 2 Tbs. chopped fresh flat-leaf parsley
- Kosher salt and freshly ground pepper, to taste
- 18 ruffle-edged lasagna noodles (not no-boil noodles)
- 1 1/2 lb. mozzarella cheese, grated
- 2 oz. Parmigiano-Reggiano cheese, finely grated
- Thinly sliced fresh basil for garnish
Zucchini Fritters

- 2 scallions, finely chopped
- 1/2 cup whole wheat flour
- 1/2 cup olive oil
- Sour cream or plain yogurt (optional)
- 2 cloves roasted garic
