Heat oil in large lidded skillet over medium-high heat
- 1 tablespoon vegetable oil
- 1 lb boneless chicken breasts, in 1 inch cubes
- 1 pkg (12 oz) spicy smoked chicken or pork sausage cut into coins
- 1 medium onion, diced
- 1 green bell pepper, diced
- 1 rib celery, diced
- 1 1/2 teaspoon cajun seasoning
- 1 can (14 oz) diced tomatoes with green chilies, drained
- 1 cup long-grain white rice
- 1 can (15.5 oz) low-sodium chicken broth
Pulled Chicken Chili

Healthy Crockpot Chili
- 1 lb boneless, skinless chicken breast
- 2 small onions, chopped roughly
- 1 green pepper, chopped roughly
- 1 package sliced mushrooms
- 2 cloves garlic, thinly sliced or minced
- 1 tin chopped jalapenos
- 2 15oz tins stewed or diced tomatoes
- 1 15oz tin small red kidney beans, rinsed
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- 1/4 teaspoon red pepper flakes
- 1/4 teaspoon cayenne pepper
- 2 teaspoons salt
- 2 teaspoons pepper
- 2 teaspoons adobe seasonings
Sweet Corn & Cheddar Souffles

Vegetarian recipe but enjoyed by meat eaters
- 1 Tablespoon unsalted butter
- 1 1/2 Tablespoon fine bread crumbs
- 2 Tablespoons olive oil
- 4 Scallions, thinly sliced
- 3 Tablespoons all-purpose flour
- 1 Cup lowfat milk
- 4 Large eggs, separated
- 1/3 Cup fresh corn kernels (1 cob)
- 1/4 Cup grated sharp white cheddar
- 1/4 Teaspoon salt
- Pinch cayenne pepper
- Pinch freshly ground black pepper
- 1/4 Teaspoon cream of tarter
- 2 Tablespoons chopped chives

This eggless sponge cake is a healthy and delicious version of a traditional sponge cake
- 2 tablespoons margarine (for greasing)
- 1 3/4 cups whole-wheat self-rising flour
- 2 teaspoons baking powder
- 1/4 cup superfine sugar
- 6 tablespoons corn oil
- 1 cup water
- 1 teaspoon vanilla extract
- 4 tablespoons strawberry or raspberry reduced-sugar spread
- superfine sugar (for dusting)
Banana Oatmeal Cookies

Preheat oven to 400 degrees
- 3/4 Cup solid vegetable shortening
- 1 Cup sugar
- 1 Egg
- 1 Cup mashed bananas
- 1 1/2 Cups all-purpose flour
- 1/2 Teaspoon baking soda
- 1 Teaspoon salt
- 1 Teaspoon cinnamon
- 1/2 Teaspoon nutmeg
- 2 Cups quick oats
- 1 Cup chocolate chips
Oatmeal-Raspberry Bars

These bars travel well so are great for a picnic, school lunches, or road trips
- 10 tablespoons cold unsalted butter, cut into pieces.
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/4 teaspoon kosher salt
- 1/4 cup rolled oats
- 1/2 cup seedless raspberry jam
- 1 cup fresh raspberries
Avocado Enchiladas

Heat oil in saucepan. Add onion; saute 5 minutes
- Sauce:
- 1 teaspoon canola oil
- 1/2 yellow onion, finely diced
- 2 garlic cloves, minced
- 1 tablespoon sugar
- 4 tablespoons ground cumin
- 3 tablespoons dried oregano
- 1 can beer
- 1 28-oz can crushed tomatoes
- 1 cup chicken broth
- 1 tablespoon balsamic vinegar
- Filling:
- 8 ripe avocados, peeled & seeded
- 1 cup cilantro leaves, roughly chopped
- 3/4 teaspoon salt
- 1/2 red onion, finely diced
- 1 jalapeno pepper, seeded & diced
- Juice of 1 lime
- 20 corn tortillas
- 2 cups grated reduced-fat Monterey Jack cheese
Whiskey-Marinated Tenderloins

- 1/4 cup bourbon
- 2 tablespoons dark brown sugar
- 1 tablespoon Worcestershire sauce
- 1/2 teaspoon ground cumin
- 3 garlic cloves, minced
- 10 (4 oz) beef tenderloin steaks, trimmed (1 1/2 inch thick)
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
